Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole is a classic recipe. Made from simple, yummy ingredients, this easy to make breakfast casserole will feed a crowd! Also a great brunch casserole recipe!

Tater Tot Breakfast Casserole

Breakfast is such a great meal! anything goes, from sweet to savory! But what do you do when you need to feed a crowd, and keep it budget-friendly? I say make a breakfast casserole!

There are so many choices! You can make a tasty Biscuit Egg Bake, or give this Tater Tot Breakfast Casserole a try.

Can I use sausage links instead of ground?

Sure! You can use the brown-and-serve, Italian, or whatever you like. Cut the links into bite-sized pieces and cook them with the onion.

Can the Tater Tots be Frozen?

  • Yes, though I prefer to have them thawed. I like to thaw mine by putting them in the fridge the night before I am making the breakfast casserole.
  • You could also spread the tots out on a baking sheet and bake them for 10 minutes in a 375° F oven. This will thaw and crisp them for more texture in your breakfast casserole.

Can this Tater Tot Breakfast Casserole recipe be doubled?

Yes it can! Use two 9"x13" baking dishes and just divide the ingredients between the two. Cook time may be a bit longer with two pans in the oven.

    You can get creative and punch up the flavor of your Breakfast Casserole.

  • Try adding some chopped green onions or chives to the egg mixture.
  • Make a taco version by using ground beef with a packet of taco seasoning.

Tater Tot Breakfast Casserole

Ingredients
  • ¼ lb Bacon, cooked and chopped
  • 1 lb Breakfast Sausage (or diced leftover ham)
  • ½ sm Onion, diced
  • 32 oz Tater Tots (thawed or pre-baked for 10 minutes)
  • 12 Eggs
  • ¾ cup Milk
  • ½ tsp Pepper
  • ½ tsp Garlic Powder
  • 1 cup Monterey Jack Cheese, shredded
  • 2 cups Cheddar Cheese, shredded
Garnish
  • Green Onions, sliced
  • Sour Cream
  • Salsa
  • Hot Sauce
Instructions
  1. Cook the bacon. Set aside to drain and cool on a paper towel lined plate.

  2. Cook the sausage and onion together, drain the grease and set aside to cool.

  3. Heat oven to 350° F

  4. Line the bottom of a 9"x13" baking dish with the tater tots (you may not end up using the entire bag).

  5. Add the eggs and milk to a mixing bowl and beat together.

  6. Add the pepper, garlic powder, and Monterey Jack cheese. Mix well and pour over the tater tots in the baking dish.

  7. Spread the sausage/onion mixture evenly over the top.

  8. Sprinkle on the bacon and the cheddar cheese.

  9. Bake at 350° F for 35 to 50 minutes, or until eggs in the center of the dish are done.

  10. Serve with your choice of garnish.
