Easy Slow Cooker Meatloaf is a flavorful, juicy meatloaf that has a delicious sauce on top. The whole family will love this easy, tasty crock pot meatloaf recipe.

Easy Slow Cooker Meatloaf

Meatloaf is such an easy and delicious meal to make in the slow cooker. With just a few simple ingredients you can mix it up and let the good old crockpot cook it low and slow.

Which Ground Beef is best to use?

You can make your meatloaf with any fat-percentage of ground beef. Personally, I like 85%-90% lean, as there is enough fat for good flavor, but not too much.

Do I need to use breadcrumbs in meatloaf?

  • The breadcrumbs help keep a meatloaf moist as they absorb juices and keep them in the meatloaf. They also help bind the loaf, and lighten up the density.
  • If you don't want to use breadcrumbs, you can substitute ground oatmeal (use a blender or food processor), crushed rice/wheat/oat cereal, crushed pork rinds, cooked rice, or extra cooked vegetables.

Cook some potatoes with your crock pot meatloaf!

If you want to make some potatoes at the same time as your crock pot meatloaf, just toss in some medium sized potatoes that are cut into quarters. They should cook in the same amount of time as the meatloaf.

Then you can mash them or serve without mashing with some butter and a little salt and pepper. Yum!

Ingredients
Meatloaf Mixture
  • 2 lbs Ground Beef
  • 1 tsp Salt (or to taste)
  • ½ tsp Pepper
  • 2 Eggs
  • ½ cup Bread Crumbs
  • ⅓ cup Milk
  • ½ tsp Smoked Paprika
  • ½ tsp Thyme
  • 1 tsp Onion Powder
  • 2 tsp Garlic Powder
  • ½ Onion, finely diced or grated (optional)
  • 1 Tbsp Yellow Mustard
  • ¼ cup Ketchup
Sauce Topping
  • 3 Tbsp Real Maple Syrup (or 2 Tbsp brown sugar)
  • ½ cup Ketchup
  • 1 tsp Liquid Smoke
Instructions
  1. Mix the meatloaf ingredients together in a large mixing bowl. Don't overwork the meat as it will yield a denser meatloaf.

  2. Form a loaf that is of even thickness, and doesn't touch the edges of the crock.

  3. OPTIONAL: Make a sling from a long piece of foil folded 3 times lengthwise. Lay the sling in the bottom of the crock and place the meatloaf over it. This will help you get the meatloaf out of the crock easily.

  4. Place the meatloaf in the crock (use optional sling, if desired) not letting the loaf touch the edges of the crock.

  5. Mix together the sauce topping ingredients.

  6. Spread half of the sauce topping over the top of the loaf.

  7. Cook on Low for 6-7 hours or on High for 3-4 hours, or until the center reads 160° F.

  8. Spread the remaining sauce topping over the meatloaf.

  9. Remove the meatloaf to a serving dish and let stand 5-10 minutes before slicing.

  10. Serve with veggies and/or mashed potatoes.
