Instant Pot Rice Pudding

Instant Pot Rice Pudding is creamy, sweet, rich, and deliciously comforting. It has a warm vanilla flavor that is very satisfying. It is really easy to make this pressure cooker rice pudding recipe. A family favorite Instant Pot Dessert!

Instant Pot Rice Pudding

The Instant Pot is such a wonderful appliance. You can make all kinds of recipes in it, including desserts! Cheesecake is the most popular dessert, but rice pudding is right up there, too!

When I was a kid we had rice pudding made with regular long grain white rice. It was really good, but not very creamy. Using a short grain rice like arborio will give you a super creamy result. Arborio rice has lots of starch in it.

Instant Pot Rice Pudding is easy to make, and takes about the same amount of time as regular white rice. There is an extra step of sautéing at the end, but it only takes a couple of minutes.

How Does This Rice Pudding Thicken?

The rice pudding will thicken a lot as it cools. Arborio rice has a lot of starch naturally, so you don't need to add extra thickener.

How To Reheat Rice Pudding

If you want to warm up the leftovers, add a splash or two of milk to your serving and mix it in. Then heat it slowly, stirring a few times. You can do this on the stove and in the microwave.

This pressure cooker rice pudding is a rich dessert, and is nice for a special occasion, or for when you want to treat yourself with something special.

Ingredients
Rice
  • 1 ½ cups Arborio Rice (don't rinse)
  • 2 ¼ cups Water
  • ¼ teaspoon Salt
  • 3 cups Whole Milk (or half and half)
  • ¾ cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla
  • ½ teaspoon Cinnamon (optional)
  • ¾ cup Raisins (optional)
Instructions
  1. Add rice, water, and salt to the pot. Place the lid on and set to Sealing. Pressure cook on High for 3 minutes. When done, let sit undisturbed for 10 minutes (10 minute natural release).

  2. Meanwhile, whisk together the milk, eggs, and vanilla. Set aside.

  3. Release any remaining pressure and then open the lid.

  4. Stir in the milk mixture and the sugar & cinnamon, if using.

  5. Turn on the Sauté setting and bring to a simmer, stirring constantly, then turn off the pot and carefully remove the inner pot to a heat-safe surface.

  6. Stir in the raisins.

  7. The rice pudding will thicken as it cools.

  8. Serve warm or cold, with cream or whipped cream.

    Good morning. I saw the answer to my question about Jasmine rice but you said use 1:1 ratio. Ratio with what please?

      Water. Equal parts rice and water.

    If I want to make the rice pudding recipe using the pot-in-pot method, do I need to change the cooking time?

      I haven't tried this, but I would imagine you will need to increase the cook time.

    I was looking for a recipe to use up some extra leftover coffee creamer and today I was able to follow your rice putting recipe, with wonderful results! The only exception was instead of heavy cream, I used sweet cream liquid coffee creamer and omitted the sugar. I followed the recipe completely the rest of the way and it was amazing!!

    If I have rice already cooked how much cooked rice should I measure out for this recipe? I assume the measurements are different for cooked and non cooked rice. thanks!

      About 3 cups. You'll need to reduce the water. I have never made this with cooked rice, and i wouldn't do it in the pressure cooker. I would cook it over the stove.

      Made this and it was so good. I used just plain old white rice. I did pressure cook it for 4 minutes and when I added the milk/egg mixture I also put in 1 itablespoon on corn starch to make up for not using the aroboric rice. It was perfect
