Instant Pot Rice Pudding

The Instant Pot is such a wonderful appliance. You can make all kinds of recipes in it, including desserts! Cheesecake is the most popular dessert, but rice pudding is right up there, too!

When I was a kid we had rice pudding made with regular long grain white rice. It was really good, but not very creamy. Using a short grain rice like arborio will give you a super creamy result. Arborio rice has lots of starch in it.

Instant Pot Rice Pudding is easy to make, and takes about the same amount of time as regular white rice. There is an extra step of sautéing at the end, but it only takes a couple of minutes.

How Does This Rice Pudding Thicken?

The rice pudding will thicken a lot as it cools. Arborio rice has a lot of starch naturally, so you don’t need to add extra thickener.

How To Reheat Rice Pudding

If you want to warm up the leftovers, add a splash or two of milk to your serving and mix it in. Then heat it slowly, stirring a few times. You can do this on the stove and in the microwave.

      Yes!

  2. Helen Duncan says:

If I want to make the rice pudding recipe using the pot-in-pot method, do I need to change the cooking time?

    1. Sandy says:

I haven’t tried this, but I would imagine you will need to increase the cook time.

  3. Hallie K says:

I was looking for a recipe to use up some extra leftover coffee creamer and today I was able to follow your rice putting recipe, with wonderful results! The only exception was instead of heavy cream, I used sweet cream liquid coffee creamer and omitted the sugar. I followed the recipe completely the rest of the way and it was amazing!!

  4. Dina says:

How long are you sautéing at the end ?

    1. Sandy says:

You will bring to a simmer and remove from heat.

  5. Gemma says:

If I have rice already cooked how much cooked rice should I measure out for this recipe? I assume the measurements are different for cooked and non cooked rice. thanks!

    1. Sandy says:

About 3 cups. You’ll need to reduce the water. I have never made this with cooked rice, and i wouldn’t do it in the pressure cooker. I would cook it over the stove.

  6. Kim says:

Hi. I am confused- ingredients state half and half but instructions state milk. Which should it be? Thanks!

    1. Sandy says:

Sorry for the confusion. Either one will work.

    2. Doreen says:

Made this and it was so good. I used just plain old white rice. I did pressure cook it for 4 minutes and when I added the milk/egg mixture I also put in 1 itablespoon on corn starch to make up for not using the aroboric rice. It was perfect

  7. Jessie says:

Hello, if I wanted to make half that recipe would I use one egg or two? Thanks!

    1. Sandy says:

      I would use 2 eggs.

    2. Penelope Cruise says:

Can I make this vegan by using oat milk and excluding/substituting the eggs?

      1. Sandy says:

Yes, I know some people use oat milk. I haven’t personally, but it should work fine. I also have a vegan Coconut Rice Pudding recipe.

  8. Montana says:

Can I use long grain rice?? I have an 8 qt instant pot. Can I double the recipe?? How long do I cook it. Thx so much

    1. Sandy says:

You can, but it won’t be quite as thick and creamy. Yes, you can double it.

  9. Sheri says:

This recipe was 5 stars — delicious and super fast & easy. I used equal measures of 2% milk and half & half and it was perfectly creamy. Think it was a little sweet, so next time I’ll reduce sugar to half a cup. Great recipe using arborio rice (which I’ve only ever used for risotto and arancini). Thanks for posting!

  10. Brandy says:

Could I use light cream instead of half n half?

    1. Sandy says:

      Yes.

      1. Sam says:

        Hi everyone,
Love your recipes. I am in Australia. What is half and half?

      2. Sandy says:

It is half heavy cream and half whole milk.
