The Instant Pot is such a wonderful appliance. You can make all kinds of recipes in it, including desserts! Cheesecake is the most popular dessert, but rice pudding is right up there, too!
When I was a kid we had rice pudding made with regular long grain white rice. It was really good, but not very creamy. Using a short grain rice like arborio will give you a super creamy result. Arborio rice has lots of starch in it.
Instant Pot Rice Pudding is easy to make, and takes about the same amount of time as regular white rice. There is an extra step of sautéing at the end, but it only takes a couple of minutes.
How Does This Rice Pudding Thicken?
The rice pudding will thicken a lot as it cools. Arborio rice has a lot of starch naturally, so you don't need to add extra thickener.
How To Reheat Rice Pudding
If you want to warm up the leftovers, add a splash or two of milk to your serving and mix it in. Then heat it slowly, stirring a few times. You can do this on the stove and in the microwave.
This pressure cooker rice pudding is a rich dessert, and is nice for a special occasion, or for when you want to treat yourself with something special.

- 1 ½ cups Arborio Rice (don't rinse)
- 2 ¼ cups Water
- ¼ teaspoon Salt
- 3 cups Whole Milk (or half and half)
- ¾ cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla
- ½ teaspoon Cinnamon (optional)
- ¾ cup Raisins (optional)

Add rice, water, and salt to the pot. Place the lid on and set to Sealing. Pressure cook on High for 3 minutes. When done, let sit undisturbed for 10 minutes (10 minute natural release).

Meanwhile, whisk together the milk, eggs, and vanilla. Set aside.

Release any remaining pressure and then open the lid.

Stir in the milk mixture and the sugar & cinnamon, if using.

Turn on the Sauté setting and bring to a simmer, stirring constantly, then turn off the pot and carefully remove the inner pot to a heat-safe surface.

Stir in the raisins.

The rice pudding will thicken as it cools.

Serve warm or cold, with cream or whipped cream.

You can, but it won't be quite as thick and creamy. Yes, you can double it.

This recipe was 5 stars -- delicious and super fast & easy. I used equal measures of 2% milk and half & half and it was perfectly creamy. Think it was a little sweet, so next time I'll reduce sugar to half a cup. Great recipe using arborio rice (which I've only ever used for risotto and arancini). Thanks for posting!

The pressure was still built up when you released it. This needs to be done in a controlled way, in bursts so it doesn't spray out of the vent.

You can, though it will be less creamy as brown rice is not like Arborio. Brown rice on its own will need to pressure cook for 22 minutes, so you can adjust the time according to that. I haven't made it, so please let me know if you do!
