Instant Pot Rice Pudding

Ingredients

Rice

  • 1 ½ cups Arborio Rice (don't rinse)
  • 2 ¼ cups Water
  • ¼ teaspoon Salt
  • 3 cups Whole Milk (or half and half)
  • ¾ cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla
  • ½ teaspoon Cinnamon (optional)
  • ¾ cup Raisins (optional)

Instructions

  • Add rice, water, and salt to the pot. Place the lid on and set to Sealing. Pressure cook on High for 3 minutes. When done, let sit undisturbed for 10 minutes (10 minute natural release).
  • Meanwhile, whisk together the milk, eggs, and vanilla. Set aside.
  • Release any remaining pressure and then open the lid.
  • Stir in the milk mixture and the sugar & cinnamon, if using.
  • Turn on the Sauté setting and bring to a simmer, stirring constantly, then turn off the pot and carefully remove the inner pot to a heat-safe surface.
  • Stir in the raisins.
  • The rice pudding will thicken as it cools.
  • Serve warm or cold, with cream or whipped cream.
