Slow Cooker Garlic Herb Potatoes are an easy, flavorful side dish that practically cooks itself. With tender red or gold potatoes, a mix of several fresh herbs, garlic, and butter, this recipe is perfect for busy weeknights, holiday dinners, or meal prep. These crockpot potatoes are savory, herby, and melt-in-your-mouth delicious!

If you're making a weeknight dinner or prepping for a big family meal, these crockpot garlic herb potatoes are a delicious, easy option.

The recipe makes a generous amount, and can easily be doubled. Perfect for feeding at a family gathering or a crowd.

The key to the flavor in this easy crock pot potato recipe is using a mix of fresh herbs. I always use parsley and rosemary, but I love adding marjoram, dill, chives, thyme, or whatever fresh herbs I have on hand.

The potatoes slow cook to the perfect tenderness, and have great flavor throughout, with butter, garlic and lots of herbs. It’s a flavorful side dish that works year-round.

Here's what's in these slow cooker side dish potatoes:
• Potatoes
• Olive Oil
• Salt
• Black Pepper
• Garlic Powder
• Onion Powder
• Water
• Fresh Mixed Herbs (such as parsley, dill, rosemary, thyme)
• Unsalted Butter

Ingredient Substitutions & Variations

Potatoes – Use baby potatoes or fingerling potatoes. Yukon golds or red potatoes hold up best.
Herbs – Use any mix of fresh rosemary, parsley, marjoram, thyme, dill, or chives. No fresh herbs? Substitute with 1 ½ teaspoons of Italian seasoning or dried herb blend.
Butter – Swap for more olive oil, ghee, or vegan butter.
Garlic Powder – Use 2–3 cloves of fresh minced garlic instead for a more pronounced garlic flavor.
Onion Powder – Replace with dried minced onion or a few thin slices of fresh onion for more texture.

Add-Ins and Enhancements

Grated Parmesan cheese – Sprinkle some on each serving for a cheesy finish.
Crumbled bacon – Adds smoky flavor and crunch.
Lemon zest – A little citrus zest brightens up the dish.
Sour cream or Greek yogurt – Dollop on top when serving for creamy tang (I like adding fresh dill with this option).
Chopped green onions – Stir in after cooking for freshness and colorful garnish.
Feta or Goat Cheese – for a creamy & tangy twist.

How to Make Garlic Herb Potatoes in the Slow Cooker

Mix the seasoning
• In a small bowl, whisk together olive oil, salt, pepper, garlic powder, and onion powder. Add water and stir.

Prep the potatoes
• Rinse and cut into 2-inch pieces. Add to the slow cooker.
Coat the potatoes
• Pour the mixture over the potatoes and toss to coat.
Add herbs
• Sprinkle chopped fresh herbs over the potatoes.

• Stir the potatoes into the herbs and sauce to coat well.

• Dot butter evenly on top.

Cook
• Cover and cook on Low for about 5 hours, stirring once or twice, if possible, until fork-tender.
Note: (I don’t recommend cooking on High, as the sauce may dry up before the potatoes are tender. If you need to cook on high, increase water to ⅓ cup and olive oil to 1 ¼ Tablespoons and cook about 2 ½ to 3 hours, stirring a couple of times).
• When done, transfer potatoes and all of the sauce to a serving bowl and add the reserved fresh herbs. Mix well and serve.

Recipe FAQs

  • Can I use dried herbs instead of fresh?
    Yes! Use 1 to 1½ teaspoons of dried herb blend like Italian seasoning. Dried herbs are more concentrated, so you’ll need less.
  • Do I need to peel the potatoes?
    No need! Leaving the skin on saves time and adds texture, nutrients, and color.
  • Can I double the recipe?
    Yes, if your slow cooker is large enough (6–7 quarts). You may need to add 30–60 minutes to the cook time.
  • Can I use the High setting on my slow cooker?
    It's not ideal, as the potatoes and herbs may dry out or cook unevenly. If you must, increase water to ⅓ cup and olive oil to 1 ¼ Tablespoons and cook on High for 2½–3½ hours and monitor closely.

Storage and Reheating

Fridge: Store in an airtight container for up to 4 days.
Freezer: Not recommended – the texture changes after freezing.
Reheat: Use an air fryer or warm gently in the microwave or in a covered dish in a 325°F oven until heated through.

Ingredients
  • 3 pounds Gold or Red Potatoes (rinsed & cut in 2-inch pieces)
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 ½ teaspoons Garlic Powder (or 3 cloves minced fresh)
  • 1 teaspoon Onion Powder (or Dried Minced Onion)
