Instant Pot Rice Pudding

The Instant Pot is such a wonderful appliance. You can make all kinds of recipes in it, including desserts! Cheesecake is the most popular dessert, but rice pudding is right up there, too!

When I was a kid we had rice pudding made with regular long grain white rice. It was really good, but not very creamy. Using a short grain rice like arborio will give you a super creamy result. Arborio rice has lots of starch in it.

Instant Pot Rice Pudding is easy to make, and takes about the same amount of time as regular white rice. There is an extra step of sautéing at the end, but it only takes a couple of minutes.

How Does This Rice Pudding Thicken?

The rice pudding will thicken a lot as it cools. Arborio rice has a lot of starch naturally, so you don’t need to add extra thickener.

How To Reheat Rice Pudding

If you want to warm up the leftovers, add a splash or two of milk to your serving and mix it in. Then heat it slowly, stirring a few times. You can do this on the stove and in the microwave.

So good! But I had rice spray everywhere…filled the overflow cup. Too much liquid?

    1. Sandy says:

The pressure was still built up when you released it. This needs to be done in a controlled way, in bursts so it doesn’t spray out of the vent.

  2. Lorena says:

What can I substitute for the milk?

    1. Sandy says:

You can try coconut milk or maybe almond milk.

  3. Amy Milz says:

Hi! Can you use brown rice in this recipe? If so, any adjustment to cooking time? Thanks for your help!

    1. Sandy says:

You can, though it will be less creamy as brown rice is not like Arborio. Brown rice on its own will need to pressure cook for 22 minutes, so you can adjust the time according to that. I haven’t made it, so please let me know if you do!

  4. Reba Peterson says:

What size Instant Pot? I only have the 3 at one, so far! Love your recipes and videos. You explain everything so clearly. Thanks Sandy.

    1. Sandy says:

This is a 6 qt, but it will fit in the 3 qt. Thank you for following along with me on this cooking journey!

  5. Dawn Browne says:

Yummy!! Loved the arborio rice version and added more raisins lol my kid loves this!

  6. Julie says:

Baked rice pudding brings back childhood memories for me, as well. Nothing you can buy compares to making it at home. I loved the arborio rice versus the long grain. And not having to rinse it? YAY! This was so good warm ~ so comforting. My husband likes it cold. So win win.

    1. Sandy says:

That’s nice, Julie. Thank you for your comment.

  7. Donna says:

WOW This Was Perfect And So So Good!Thank You Very Much.

    1. Sandy says:

      That’s great, Donna! Thank you.

  8. London says:

Why is the milk “divided”? Instructions do not refer to using the second half.. Thanks.

    1. Sandy says:

Sorry, London, that was a typo I failed to delete. You will add all of the milk at once.

  9. Kanya says:

This was perfect. Will make again.

    1. Sandy says:

      Awesome!

  10. Elissa Saunders says:

Any chance there is a way to take the eggs out of this? I can’t have them. Thanks if you have any ideas. I really love your blog.

    1. Sandy says:

I would try making it without the eggs, and decrease the milk by about 1/2 cup. See how that works for you!

      1. Gregg says:

Can I substitute with Jasmine rice? Would rice to water ratio be the same. I want to try this.

      2. Sandy says:

Yes, use a 1:1 ratio with Jasmine rice. Rinse it first.

    2. Vicki says:

I saw a recipe for Instant pot rice pudding that uses sweetened condensed milk instead of the egg mixture.
