The Instant Pot is such a wonderful appliance. You can make all kinds of recipes in it, including desserts! Cheesecake is the most popular dessert, but rice pudding is right up there, too!
When I was a kid we had rice pudding made with regular long grain white rice. It was really good, but not very creamy. Using a short grain rice like arborio will give you a super creamy result. Arborio rice has lots of starch in it.
Instant Pot Rice Pudding is easy to make, and takes about the same amount of time as regular white rice. There is an extra step of sautéing at the end, but it only takes a couple of minutes.
How Does This Rice Pudding Thicken?
The rice pudding will thicken a lot as it cools. Arborio rice has a lot of starch naturally, so you don't need to add extra thickener.
How To Reheat Rice Pudding
If you want to warm up the leftovers, add a splash or two of milk to your serving and mix it in. Then heat it slowly, stirring a few times. You can do this on the stove and in the microwave.
This pressure cooker rice pudding is a rich dessert, and is nice for a special occasion, or for when you want to treat yourself with something special.

Instant Pot Rice Pudding is creamy, sweet, and deliciously comforting. It is so easy to make this pressure cooker rice pudding recipe. A family favorite!
- 1 ½ cups Arborio Rice (don't rinse)
- 2 ¼ cups Water
- ¼ teaspoon Salt
- 3 cups Whole Milk (or half and half)
- ¾ cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla
- ½ teaspoon Cinnamon (optional)
- ¾ cup Raisins (optional)

Add rice, water, and salt to the pot. Place the lid on and set to Sealing. Pressure cook on High for 3 minutes. When done, let sit undisturbed for 10 minutes (10 minute natural release).

Meanwhile, whisk together the milk, eggs, and vanilla. Set aside.

Release any remaining pressure and then open the lid.

Stir in the milk mixture and the sugar & cinnamon, if using.

Turn on the Sauté setting and bring to a simmer, stirring constantly, then turn off the pot and carefully remove the inner pot to a heat-safe surface.

Stir in the raisins.

The rice pudding will thicken as it cools.

Serve warm or cold, with cream or whipped cream.

Baked rice pudding brings back childhood memories for me, as well. Nothing you can buy compares to making it at home. I loved the arborio rice versus the long grain. And not having to rinse it? YAY! This was so good warm ~ so comforting. My husband likes it cold. So win win.

I would try making it without the eggs, and decrease the milk by about 1/2 cup. See how that works for you!

Yes, use a 1:1 ratio with Jasmine rice. Rinse it first.
