It's good to have a few basic sauce recipes in your recipe box. You never know when you might want to whip up a quick pasta or veggie dish that needs a tasty sauce.
I have several that I go to repeatedly, and this Garlic Parmesan Cream Sauce is one of my favorites! It's pretty decadent, so I usually have it over veggies. It is especially delicious on spaghetti squash! Not that I won't have this sauce on orzo or other pasta when I'm feeling a little indulgent, or for company.
This sauce comes together quickly, so it's perfect for a weeknight or last minute meal.

- 4 Tbsp Butter
- 4 Cloves Garlic pressed
- ¼ cup Flour
- 2 cups Chicken Broth
- Pinch of Kosher Salt
- ½ tsp Black Pepper
- Pinch of Nutmeg
- ½ cup Heavy Cream
- ¾ cup Parmesan Cheese grated
- Chopped Parsley
- Parmesan

Melt butter over medium heat in a skillet.

Add the pressed garlic and stir constantly for a minute or so. Don’t overcook!

Whisk in the flour (it will form a paste) and cook for a minute to get the raw taste out of the flour.

Increase heat to medium high and gradually whisk in the broth. Be sure to whisk out any lumps.

Add salt, pepper, and nutmeg.

Whisk in the heavy cream and remove pan from burner.

Stir in the parmesan cheese.

Taste and adjust salt to your liking.
Serve over pasta, vegetables, spaghetti squash, fish, potatoes, etc.

Would this work with subbing a keto friendly flour such as coconut flour? possibly with an additional thickener, like Xanthium gum? thanks!
