Instant Pot Banana Bread Bites

If you have had an Instant Pot® for very long, you may know about or have made the Egg Bites. There are lots of other tasty “Bites” that you can make in your electric pressure cooker!

I got the idea for making banana bread bites in the pressure cooker when I was making my Instant Pot Banana Bread recipe.

I thought it would be fun to have small bites that you could grab on the go. These are also easy to store in a zipper baggie to keep them moist.

These Instant Pot Banana Bread Bites are the perfect size for little hands to hold. Kids love bananas, and this is a tasty homemade snack for them to enjoy.

Add some blueberries, nuts, chocolate chips, or other extras for other fun versions of bites.

If you want to add chocolate chips, or nuts, you can either add them to the batter, or add some to each hole in the mold as you fill them.

I like to make some with chocolate chips, and some without, so I add the chips to the holes as I fill them.

If you fill the holes in the mold halfway, the bites will be the perfect size, and will do well when you stack two molds in the pressure cooker as they won’t rise up too high.

How many bites does this Instant Pot Banana Bread Bites recipe make?

This recipe makes 21 banana bread bites, or 3 molds worth. Each mold has 7 openings.

Lately the chocolate chip version is my favorite. That will probably change next time I make them. I have loads of blueberries!

Where can I find the silicone bites mold?

This is the one that I use because the lid is also silicone and can be pressure cooked. Some of the molds are sold with a plastic lid that cannot be pressure cooked.

I would buy two of them. Their price is very good.

If you want to bake these in the oven, just set the temperature to 350° F, and bake for 10 to 15 minutes. Check on them to make sure they don’t over cook.

Instant Pot Banana Bread Bites

Ingredients 

  • ½ cup Butter, softened
  • ½ cup Brown Sugar
  • ½ cup White Sugar
  • 2 Eggs, beaten
  • 1 tsp Vanilla
  • 3 Ripe Bananas, mashed
  • ¼ cup Buttermilk (or Sour Cream)
  • 2 cups All Purpose Flour, sifted
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • ½ tsp Cinnamon
  • ½ tsp Salt

Tools You'll Need

  • 6 or 8 qt Electric Pressure Cooker
  • Trivet with long handles
  • 3 Mixing Bowls
  • Hand Mixer
  • 3 Egg Bites Silicone Molds*
  • Baking Spray
  • Foil

Instructions 

  • Add 1 1/2 cups of water to the inner liner of the pressure cooker (2 cups if using the 8 qt).
  • Spray the bites molds with baking spray and set aside.
  • In a mixing bowl, use a hand mixer to cream the butter and sugars together.
  • Add the beaten eggs and vanilla to the creamed butter/sugar mixture. Use a spoon to mix well.
  • In another mixing bowl, mash the ripe bananas using a fork.
  • Stir the bananas and buttermilk (or sour cream) into the butter/sugar mixture and mix well.
  • In another mixing bowl, sift together the flour, baking soda, baking powder, cinnamon and salt.
  • Add the dry ingredients to the wet ingredients and gently stir by hand, until just moistened. Don't over mix!
  • Spoon the batter into prepared bites mold*, fill openings half full (or use a 2 oz ice cream scoop). Cover with foil, leaving some room for the bites to rise a little. Gently crimp the edges.
  • Set the trivet on the counter, and put the mold on it. Stack a second filled mold on top of that and carefully place it in the pot using the handles.
  • Close the lid and set the steam release knob to the Sealing position.
  • Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 14 minutes. High pressure.
  • After the cook time is finished, turn the steam release knob to the Venting position to quick release the steam/pressure.
  • After all of the pressure is out and the pin in the lid drops down, open it and use silicone mitts or pot holders to very carefully remove the trivet, using the handles.
  • Carefully remove the foil, and release the bites from the mold onto a plate.
  • Serve the banana bread bites warm, slathered in butter, or let it cool and eat them as you like.

Notes

*You will need 3 bites molds, or make multiple batches.
It is important to follow the recipe when baking. If you add too many bananas, or other ingredients it may change the outcome.

    Other than spaghetti this is only the 4th thing I’ve tried with the IP. I’m absolutely in love!! Reading through the comments, I also had enough for a 4th mold, but I didn’t make it. I think that probably has to do with the size of the bananas. But the first two molds have turned out amazing, the third mold is still in the IP. Thank you for sharing your passion with us.

    Can I use the silicone lids on both molds at the same time, one stacked on the other? I have not used the molds before so I’m a bit clueless!

        Every time I make this the first 2 turn out and the second 2 are completely under cooked . Is this because it takes less time for the instant pot to come to pressure , I’m throwing my second batch in for a second time right now for the 14 minutes

    Hi I just made these and they are AMAZING!! I followed your recipe to a T and they came out so perfect. My husband and I ate 6 of them right away haha. My only question is how long will they keep in ziplock baggies stored in the fridge?

      I see no mention in the recipe about covering the top mold with foil. Is the foil for stacking purposes only. If you are only doing 1 mold at a time do you leave them uncovered?

        Hi Lori, in step 9 I do say to cover with foil. Do cover both. This will help them stay dry and cook nicely.

        1 fresh blueberry/ banana &
        1 chocolate chip/ banana.
        They turned out great. I’ll be off to buy a 2nd mold tomorrow. I have enough ripe bananas for another 21 bites.

    I ended up with enough batter to make four molds of bites. I cooked the first two together. The top one was done and the bottom was still a bit mushy. I put those back in for 2 minutes and they were perfect. When I did the 2nd batch, I put them in for 17 minutes to see if they would both be done. After 17 minutes, neither one was cooked through. I had to put them back in a few times and finally gave up when they were almost baked through. I am not sure what I did wrong. They taste delicious and I did add more water between batches. Any thoughts? I want to make these again, but not sure how to go about it. Thanks!

      I think what happened is that the pot was still hot when you made the second batch, so it didn’t take as long to come to pressure. They didn’t get any of that heating up cook time. If you had 1 mold in at that time they may have cooked. I’m also thinking that if you had enough batter for 4 molds, your measurements were off. Most likely too much banana, but not knowing how you measured, I can’t say for sure. The wetter the ingredients are from too much of the wet/moist ingredients, the longer they will take to become firm/done.

    I just bought an instant pot, and I have not baked anything. I have two questions:
    1)How many of the egg molds can fit at one time? From the instruction above, it seems like two. So to cook the entire recipe. It will take 2 batches. Is this correct?
    2) If I order the egg mold with the silicon lid, can the lid be used instead of foil?

      Yes, that is correct. You can fit 2, though possibly 3 will fit in the 8 qt (haven’t tried that).
