Instant Pot Banana Bread Bites
If you have had an Instant Pot® for very long, you may know about or have made the Egg Bites. There are lots of other tasty “Bites” that you can make in your electric pressure cooker!
I got the idea for making banana bread bites in the pressure cooker when I was making my Instant Pot Banana Bread recipe.
I thought it would be fun to have small bites that you could grab on the go. These are also easy to store in a zipper baggie to keep them moist.
These Instant Pot Banana Bread Bites are the perfect size for little hands to hold. Kids love bananas, and this is a tasty homemade snack for them to enjoy.
Add some blueberries, nuts, chocolate chips, or other extras for other fun versions of bites.
If you want to add chocolate chips, or nuts, you can either add them to the batter, or add some to each hole in the mold as you fill them.
I like to make some with chocolate chips, and some without, so I add the chips to the holes as I fill them.
If you fill the holes in the mold halfway, the bites will be the perfect size, and will do well when you stack two molds in the pressure cooker as they won’t rise up too high.

This recipe makes 21 banana bread bites, or 3 molds worth. Each mold has 7 openings.
Lately the chocolate chip version is my favorite. That will probably change next time I make them. I have loads of blueberries!

Where can I find the silicone bites mold?
This is the one that I use because the lid is also silicone and can be pressure cooked. Some of the molds are sold with a plastic lid that cannot be pressure cooked.
I would buy two of them. Their price is very good.

If you want to bake these in the oven, just set the temperature to 350° F, and bake for 10 to 15 minutes. Check on them to make sure they don’t over cook.

- 1/2 cup Butter, softened
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 2 Eggs, beaten
- 1 tsp Vanilla
- 3 Ripe Bananas, mashed
- 1/4 cup Buttermilk (or Sour Cream)
- 2 cups All Purpose Flour, sifted
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 6 or 8 qt Electric Pressure Cooker
- Trivet with long handles
- 3 Mixing Bowls
- Hand Mixer
- 3 Egg Bites Silicone Molds*
- Baking Spray
- Foil

Add 1 1/2 cups of water to the inner liner of the pressure cooker (2 cups if using the 8 qt).

Spray the bites molds with baking spray and set aside.

In a mixing bowl, use a hand mixer to cream the butter and sugars together.

Add the beaten eggs and vanilla to the creamed butter/sugar mixture. Use a spoon to mix well.

In another mixing bowl, mash the ripe bananas using a fork.

Stir the bananas and buttermilk (or sour cream) into the butter/sugar mixture and mix well.

In another mixing bowl, sift together the flour, baking soda, baking powder, cinnamon and salt.

Add the dry ingredients to the wet ingredients and gently stir by hand, until just moistened. Don't over mix!

Spoon the batter into prepared bites mold*, fill openings half full (or use a 2 oz ice cream scoop). Cover with foil, leaving some room for the bites to rise a little. Gently crimp the edges.

Set the trivet on the counter, and put the mold on it. Stack a second filled mold on top of that and carefully place it in the pot using the handles.

Close the lid and set the steam release knob to the Sealing position.

Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 14 minutes. High pressure.

After the cook time is finished, turn the steam release knob to the Venting position to quick release the steam/pressure.

After all of the pressure is out and the pin in the lid drops down, open it and use silicone mitts or pot holders to very carefully remove the trivet, using the handles.

Carefully remove the foil, and release the bites from the mold onto a plate.

Serve the banana bread bites warm, slathered in butter, or let it cool and eat them as you like.
*You will need 3 bites molds, or make multiple batches.
It is important to follow the recipe when baking. If you add too many bananas, or other ingredients it may change the outcome.

I made the banana bread bites. I thought I had all the ingredients but forgot the buttermilk or sour cream so substituted vanilla yogurt (now I worry about the bites being too sweet). It was a choice of yogurt or blended cottage cheese or a special trip to the store. I also added walnuts.
Update: the vanilla yogurt worked fine as a replacement! The bites are perfect!

This recipe is REALLY good! I made the muffins in some Instapot metal muffin tins so I was nervous about how they’d bake. They baked up just fine, although the second and third batches I did for 17 minutes instead of 14 to account for the lack of heat-up time.
