Breakfast is such a fun meal to cook! There are so many tasty ways to prepare the basics. Oatmeal is a breakfast food we eat fairly often in our home, and it's fun to make it extra special!
I made my first baked oatmeal recipe about 7 years ago. A friend shared her recipe and it was really good. It made a lot though.
What I learned from that is that baked oatmeal freezes very well. We could have a quick yummy breakfast by warming up a square.
This Easy Peach Baked Oatmeal recipe makes about 6 servings. It doubles nicely to feed a crowd. You can fit a double batch in a 9"x13" baking dish.
The cook time may be a bit longer, so check on it while it is baking. It is done when the center is set.
I usually use canned peaches in this baked oatmeal recipe as I often have them in the pantry. You can use fresh ripe peaches if you have them. They are so flavorful!
Serve Easy Peach Baked Oatmeal with some warm cream or milk poured over it. Top it off with an extra drizzle of fresh maple syrup for a delicious, easy breakfast!

- ⅓ cup Melted Butter
- 1 (15 oz) can Sliced Peaches
- 2 Eggs
- ½ cup Brown Sugar, packed
- 1 ½ tsp Baking Powder
- ¼ tsp Salt
- 1 ½ tsp Cinnamon
- ½ tsp Nutmeg
- 1 ½ tsp Vanilla Extract
- ¼ tsp Almond Extract
- ¼ cup Real Maple Syrup
- ½ cup Milk
- 3 cups Old Fashioned Oats (not quick cooking)

Heat oven to 375° F. Grease/spray a 8"x8" baking dish and set aside.

Melt the butter and set aside to cool a little.

Open the can of peaches and drain ½ cup of the liquid from the can and discard. Set the remaining peaches/liquid aside.

In a large mixing bowl, beat the eggs.

Add the brown sugar, baking powder, salt, cinnamon, nutmeg, and vanilla extract, almond extract, and maple syrup. Mix well.

Stir in the cooled melted butter, oats, and milk. Mix well.

Stir in the peaches with their remaining liquid from the can.

Pour mixture into the baking dish and gently pat down.

Bake at 375° (F) for 20 to 30 minutes, or until the center is set.

Serve with warm cream or milk.
