Chocolate Peanut Butter No Bake Cookies
These no bake cookies are a blast from the past! I had these on my lunch tray in elementary school (on the good days, lol!). My Nana made them for me when I went to visit her. I loved helping her stir the oats and spoon the dough onto the sheet pan.
Chances are you have had these at some point in your life, as this recipe goes back at least 60 years. With this easy recipe you can make them yourself.
Here are a few tips for making Chocolate Peanut Butter No Bake Cookies to ensure great results:
• Put the oats in a large mixing bowl so you have room for all of the mixture.
• Use medium heat so the chocolate mixture doesn't burn. It takes a little time, but it will come to a boil.
• Stir frequently so it doesn't burn and scrape the sides and bottom of the pan.
• Make sure to set a timer for 3 minutes once the chocolate mixture comes to a boil. Any less and the cookies may not set. Any more and the cookies might have a dry, grainy texture.
• Once the chocolate mixture is ready, work quickly and stir it into the oats. Scoop the cookies onto a parchment lined surface as soon as you can. The mixture sets up pretty quickly.

Chocolate Peanut Butter No Bake Cookies are a cookie from my childhood. They are so easy to make, and very chocolatey and delicious.
- 3 cups Oats (old fashioned or quick is fine)
- ½ cup Butter, unsalted
- 2 cups Sugar
- Pinch of Salt
- ¼ cup Cocoa Powder
- ½ cup Milk
- ½ cup Peanut Butter
- 1 ½ tsps Vanilla

Have all of your ingredients measured out and ready to go before you begin. Also have a parchment lined baking pan or other surface ready for the cookies to be scooped onto.

Measure the oats into a large mixing bowl and set them aside.

In a large sauce pan, melt the butter over medium heat.

Whisk in the sugar until dissolved.

Whisk in the salt, cocoa powder, milk, and peanut butter. Whisk continuously until the mixture smooths out.

Stir frequently over medium heat starting to simmer.

The mixture will eventually come to a roiling boil, with the bubbles all throughout, and will keep boiling as you stir. When that happens, set a timer for 3 minutes, stirring frequently, scraping the sides of the pan.

When the timer goes off, take the pan off of the heat and stir in the vanilla. It might bubble up a little, but that's okay. Just stir it in.

Immediately pour the chocolate mixture over the oats and mix until all of the oats are coated with the chocolate.

Using an ice cream scoop, immediately scoop the cookies onto the parchment lined baking sheet. Don't press them. They should be warm enough that they will flatten out a little bit.

Allow the cookies to cool fully before enjoying. It takes about 25 minutes.

Store in an air tight container.
