Blueberry Lemon Popsicles
When I was a little girl, we lived in a townhouse complex with 92 units. Almost all of the families had children of various ages. It was fun with so many other kids to play with, especially in the Summer.
We'd play kick the Can, Red Rover, Hide-and-Go-Seek, Hopscotch, and all of the fun things kids do in Summer! We would get very engrossed in all of that fun activity, and somehow didn't hear mom call us to come in. But, the ONE THING that got through to us and jolted us out of our playtime reverie was the tinny tinkling music of the Ice Cream Man!
Somehow we heard the Ice Cream Man from across town, as we'd strain our ears to hear if he was getting closer to our street. We'd all run home, beg our parents for some money, even offering to get one for our little sister (that was a big deal). If we scored some cash from mom, we'd tear out of the house and chase him down until he stopped! Whew!
I always went for the fruity flavors. I still do. I mean, I like a fudgsicle as much as the next person, but I love the fruit! If these Blueberry Lemon Popsicles had been on the menu back then, I would have bought one every time! It would have been healthier, too, not that I would have cared!
You can feel good about giving these to your kids. Though I would hate to be the one to deprive them of the exhilaration of chasing down the Ice Cream Man!

- 3 cups Blueberries fresh or frozen (I use 1 cup frozen and 2 cups fresh)
- 2 Tbsp Fresh Lemon Juice about ½ of a Lemon
- ¼-1/3 cup Honey depending on how sweet your berries are

Put all of the ingredients into a blender or food processor and puree.

Pour into popsicle molds, leaving ¼ inch of space.

Place the popsicle mold in the freezer for about 1 hour, then place the lid on and push the sticks in, leaving about 1 ¼ inch sticking out.

Freeze for 4-6 hours, or overnight.

To release popsicles from the mold, gently run hot water on the bottom of the mold for a few seconds and try to pull one of the popsicles out. If it doesn’t come out with minimal effort, run under hot water for a few more seconds.
Popsicles can be stored in wax paper, plastic baggies, or a food storage container, with a piece of wax or parchment paper in between each popsicle.
*Calories based on using ⅓ cup of honey. 65 calories if using ¼ cup.

I added 2/3 a cup of water as I used entirely frozen blueberries I also swapped the honey for maple syrup. I really liked these but my partner thought they were just way too one tone with the blueberry. If you like blueberry and can eat them straight up you'll like these.

I think the water may have diluted the lemon. You can always use more lemon juice.
