Variations

Chicken Breasts Instead of Thighs: Just be careful not to overcook them as they can dry out more easily than thighs.
Other Meat Options: Boneless pork chops and shrimp pair well with the creamy Tuscan flavors. shrimp will cook much faster.
Other Cheese: Boursin adds amazing flavor, but cream cheese is a good substitute. You can also stir in a little garlic powder and Italian herbs to mimic the flavor.
Italian Seasoning: Use instead of oregano for more intense herb flavor.

How to Make Crockpot Marry Me Chicken

1) Brush the chicken in sun dried tomato oil.
2) Coat chicken in the herbs and spices.

3) Add the broth.
4) Layer the garlic and sun dried tomatoes over the top. Cook until chicken is done.

Ingredients
  • 2 pounds Chicken Thighs, skinless-boneless
  • 2 Tablespoons Sun Dried Tomato Oil
  • 2 teaspoons Paprika
  • 1 teaspoon Kosher Salt
  • Β½ teaspoon Black Pepper
  • ΒΌ teaspoon Red Pepper Flakes (more for spicy)
  • 1 teaspoon Dried Oregano
  • ΒΎ cup Chicken Broth
  • 3 cloves Garlic, minced
  • 4 ounces Sun Dried Tomatoes, chopped
To Finish
  • β…“ cup Grated Parmesan Cheese
  • 1 5.2-ounce container Boursin Cheese (Garlic & Herb), or Cream Cheese
  • 1 handful Fresh Basil Leaves, torn
  • 3 cups Fresh Baby Spinach
Instructions
  1. Add chicken to the crock and brush with the sun dried tomato oil on both sides.

  2. Sprinkle the paprika, salt, pepper, red pepper flakes, and oregano over both sides of the chicken.

  3. Pour in the broth, then add the garlic and sun dried tomatoes over the chicken.

  4. Cover and cook on Low for 4-5 hours or High for 2-3 hours, or until chicken is done and reaches 175Β° F (dark meat).

  5. Remove the chicken to a bowl and use 2 forks to shred the meat. Set aside.

  6. Add the parmesan, Boursin (or cream cheese), spinach, and basil leaves to the crock and use a fork to whisk it until the cheese has melted.

  7. Add the chicken back into the crock and stir well.

  8. Serve as desired. I recommend serving with potatoes, rice, cauliflower rice, pasta, or on a bun.
