Simple Crockpot Chicken Fajita Ingredients
- Bell Peppers – Red, yellow, orange, green or any colors will work.
- Onion and Fresh Garlic – Use any color onion that you have on hand (yellow, white, red, etc.).
- Salsa – Or a can of diced tomatoes with green chilies (such as original Rotel®).
- Boneless Skinless Chicken Breasts – Leave them whole so they don't over cook.
- Fajita Seasoning – Use a store bought blend or homemade.
- Tortillas – Flour or corn tortillas.
- Toppings/Garnishes – Avocado, hot sauce, tomatoes, sour cream, cilantro, etc.

Having fresh bell peppers and onion makes a big difference as well. You can also use frozen bell peppers, but they will release more water and be softer.

How to Make Slow Cooker Chicken Fajitas
1) Add half of the veggies to the crockpot.
2) Add the whole chicken breasts and cover with the fajita seasoning (Use store bought or homemade).
3) Pour the salsa over the seasoned chicken breasts.
4) Top with the remaining vegetables, cover, and cook.
Serving Crockpot Fajitas
- Gather all of your garnishes and toppings. Sour cream, salsa, chopped tomatoes, sliced avocados or guacamole, Mexican hot sauce.
- After cooking, use a slotted spoon to transfer the mixture to a serving platter. Then remove the chicken and slice it.
- To make a fajita, wrap some of the chicken and vegetables in warmed corn or flour tortillas, add lots of yummy toppings, and have a feast!
- Serve chicken fajitas over a bowl of rice or quinoa to make a burrito bowl.
Tips And Variations
- If you prefer the bell peppers crisp, and not too soft, wait to add them to the crockpot until the last 40 minutes of cook time.
- Store leftovers in the fridge for up to 3 days.
- This easy fajitas recipe makes a nice amount, and will easily feed a family of 3 or 4. You can sneak another chicken breast in there to make more servings, if you want to.

Slow Cooker Chicken Fajitas is a recipe that is easy to make and my whole family loves! With tender chicken strips, bell peppers, onion and delicious spices.
- 16 oz Salsa, divided
- 1 7-oz can Green Chiles, diced
- 1 large Onion, sliced thick, divided
- 3 Bell Peppers (red, green, yellow), sliced, divided
- 5 cloves Garlic, minced
- 3 Chicken Breasts (skinless/boneless)
- 3-5 Tablespoons Fajita Seasoning (homemade or store bought)
- 1 teaspoon Salt
- Flour Tortillas (or corn)
- Sour Cream
- Cilantro
- Lime Wedges
- Cheese, shredded
- Avocado, or guacamole
- Tomato Slices

Pour half of the salsa and all of the green chiles into the crock.

Add half of the onion and bell pepper slices, and all of the garlic.

Season the chicken breasts liberally with the fajita seasoning on both sides. Set the chicken on top of the peppers/onions.

Pour the remaining salsa over the chicken breasts.

Add the remaining bell peppers and onions. Sprinkle with salt.

Cover and cook on High 3-4 hours, or Low 6-7 hours.

Remove chicken and slice into strips.

Use a slotted spoon to remove the peppers & onions to a platter. Arrange the chicken strips next to them.

There will be a fair amount of liquid left in the crock, which tastes good and makes a nice sauce to keep the fajitas moist. Use as much as you want. You can also save it and make an amazing Taco Soup with it!

Serve with flour tortillas and your choice of toppings.
