What is in Mississippi Pot Roast?
This tasty slow cooker pot roast has simple ingredients: A beef pot roast (I prefer a chuck roast), a stick of butter, dry ranch dressing mix, packet of au jus mix, and pepperoncini peppers with some of their juice included (or use banana peppers).
All of this slow cooked with a nicely marbled beef chuck roast makes an absolutely delicious meal.
How Did Mississippi Pot Roast Recipe Get its Name?
- The original Mississippi Roast recipe is a great example of how something can go viral, and this recipe did. Big time! This was even before we used the term viral, lol!
- A lady in Mississippi named Robin Chapman, a home cook, made this beef roast for her family often.
- Her friend put it in the church cookbook. It started to become popular, and one day a blogger blogged about it.
- Then someone pinned it on Pinterest, and eventually a guy from the NY Times tracked Robin down, wrote about it, and the rest is history! She never called it Mississippi Pot Roast, she just called it roast (Robin, I hope I got that right)!

This Crockpot Mississippi Pot Roast is a true “dump and start” recipe, and couldn’t be easier to make as it involves only a few minutes of prep time.
A Note About the Saltiness
This pot roast recipe does have delicious flavor, but it can run on the salty side. Here are a few different ways to lessen that if you are concerned:
• Use unsalted butter.
• Try to find low-sodium ranch seasoning, or make your own so you control the salt (here's my Ranch Seasoning recipe).
• Use a little less pepperoncini juice and add a little bit of water to dilute it.
• Skip the au jus or brown gravy and just use low sodium beef broth (the flavor will not be as rich).
• Cook a few cut potatoes with the roast to absorb some of the salt. They will taste great, too!
How to Make Slow Cooker Mississippi Pot Roast
• Place the chuck roast in the crock pot.
• Pour the pepperoncini juice from the jar over the roast.
• Sprinkle the ranch seasoning powder over the roast.
• Sprinkle the Au Jus packet over the roast.
• Place the stick of butter on top of the roast.
• Scatter the pepperoncinis over the roast.
• Place the lid on the crock pot and set to Low heat for 8-10 hours, or High heat for 4-6 hours Cook time will depend on how big the roast is. I often cut larger roasts in half for more even cooking.
• When the roast is done the tender meat will want to fall apart. At that point you can turn off the crock pot.
• I like to use a turkey baster to remove the drippings to a fat separator, then shred the meat using two forks.
• Then pour back in as much of the drippings as you like. That juice has a lot of flavor, so don't be shy with it. You could also make a gravy with it.
• Serve over mashed potatoes, rice, a hoagie roll, or even on noodles/zoodles.
An extra step I like to take is to remove as much of the fat as possible right after it’s done cooking, and use the defatted flavor-packed juices for gravy, and also use it to keep the roast from becoming dry. MOST of the flavor is in the drippings!
What to Serve With Mississippi Roast
Creamy mashed potatoes, cauliflower rice, green beans, coleslaw, green salad, and biscuits all make great sides for this juicy pot roast.
Substitutions for This Easy Mississippi Pot Roast Recipe
For the Meat: Try this recipe with Chicken or a Pork Roast (or pork butt). Very good!
Pepperoncinis: Try Banana Peppers.
Au Jus: A Brown Gravy Mix is a great option.
Ranch Mix: Dry Italian Dressing Mix (I like the zesty Italian). or Onion Soup Mix.

How to Store the Leftover Roast
• Store leftovers in an airtight container in the fridge for up to 4-5 days. This roast is as good the next day!
• Freeze leftover roast in a freezer-safe container for up to 3 months.

I have used a pork roast instead of beef (much cheaper). It was excellent. Some in my family thought it was better than beef! Also used chicken breasts. Good too!

My niece made this and I was smitten! I shared your recipe with a friend and her version was so not palatable. Here's what she did wrong. To a 2LB roast she added the entire contents of a 16oz jar of spicy pepperoncini! She didn't add the butter and for me that yummy ingredient is a game-changer. The end result was a pickled chunk of meat that I politely took a few bites of but became nauseous afterwards. Moral of the story is to follow the directions to this EXCELLENT RECIPE. Don't go overboard on the pepperoncini and add the butter for the full effect of scrumptious!

I cut the roast into cubes (1 1/2 - 2 inches), thickened the gravy once the meat was done and served over mashed potatoes - with steamed vegetables as a second side. Will make this again and again!
