Blueberry Lemon Popsicles

Homemade Blueberry Lemon Popsicles recipe has only 3 ingredients, are super easy to make, and are a yummy alternative to store bought popsicles. This fruit popsicle recipe can be made with fresh or frozen berries. Kid approved!

Lemon Blueberry Popsicles

Popsicles are one of my favorite ways to beat the heat.

These homemade popsicles are fresh tasting, being naturally sweetened with honey, and bursting with fresh blueberry flavor, with just the right amount of bright lemony tang.

Best of all, they’re very easy to make. The hardest part is waiting for them to freeze!

Ingredients in Blueberry Lemon Popsicles

  • Blueberries: I often use a mix of fresh and frozen blueberries for the best texture and flavor, but you can use whatever you have on hand.
  • Lemon Juice: A squeeze of fresh lemon juice gives them a refreshing citrus twist.
  • Honey: Adds a touch of natural sweetness. Depending on how sweet your berries are, you can adjust the honey to taste.

Simple Variations

  • Creamy Lemon Blueberry Popsicles: Add ½ cup of Greek yogurt or coconut milk to the blender for a creamier texture. This also adds a bit of protein and richness.
  • Mixed Berry Popsicles: Swap out 1 cup of the blueberries for raspberries or strawberries. Just keep the total berry amount to 3 cups.
  • Lavender Lemon Blueberry: Add a tiny pinch (less than ¼ tsp) of dried culinary lavender to the blender for a subtle floral note that pairs well with the lemon.
  • Swirled Popsicles: Blend half the mixture as directed, then blend the other half with ¼ cup Greek yogurt or coconut cream. Layer the two mixtures into the molds for a pretty, marbled effect.

Popsicle Storage

These popsicles store well. Just layer them between pieces of wax paper or parchment paper and place in an airtight container (Or wrap them individually), and keep in the freezer for up to 3 months.

You can feel good about giving these homemade fruit popsicles to your kids. Though I'd hate to deprive them of the exhilaration of chasing down the Ice Cream Man!

Simple, refreshing, and made with just a few wholesome ingredients — these lemon blueberry popsicles are sure to become a favorite summertime treat!

With only 3 ingredients, Blueberry Lemon Popsicles are a homemade, healthy, and very yummy alternative to store bought popsicles. They are super easy to make. Kid approved!

Ingredients
  • 3 cups Blueberries, fresh or frozen (I use 1 cup frozen and 2 cups fresh)
  • 2 Tablespoons Fresh Lemon Juice, ½ of a Lemon
  • ¼-⅓ cup Honey, depending on how sweet your berries are
Instructions
  1. Put all of the ingredients into a blender or food processor and puree.
  2. Pour into popsicle molds, leaving ¼ inch of space.

  3. Place the popsicle mold in the freezer for about 1 hour, then place the lid on and push the sticks in, leaving about 1 ¼ inch sticking out.

  4. Freeze for 4-6 hours, or overnight.
  5. To release popsicles from the mold, gently run hot water on the bottom of the mold for a few seconds and try to pull one of the popsicles out. If it doesn’t come out with minimal effort, run under hot water for a few more seconds.
Recipe Notes

Popsicles can be stored in wax paper, plastic baggies, or a food storage container, with a piece of wax or parchment paper in between each popsicle.

      The Greek yogurt added is so good! Taste before you freeze to make sure they are sweet enough!

    I used only frozen blueberries. I added a little extra lemon because I love tart flavors. We really liked these popsicles.

    Always looking for blueberry recipes. We have 8 plants in the garden and boy do they put out a bunch of berries every summer. I’m going to give this a try this summer. Sounds yummy. Thanks for the recipe!
