Red Beet Hummus
As much as I love my Classic Hummus Recipe, when beets are in season I love to make Red Beet Hummus. It's a bit sweeter than the Classic, yet still has a nice earthy note to it.
My son won't eat beets, but he inhales this Red Beet Hummus! Tonight he was eating my batch for the photo shoot, and he finally held out the bowl to me and asked me to take it from him. He'd made a sizable dent!
Kids like this recipe more than any other hummus I have served. It must be the sweetness. It's not like a dessert, it has a nice balance of sweet and savory. And it's so pretty! Gotta love nature's colors!
Red Beet Hummus is on the menu for our Annual Holiday Party. I have a few appetizers and dips I like to make for parties, and this one is a crowd favorite! You can serve it with pita chips, carrot sticks, cucumber, radish, celery, cauliflower florets, and more.
This is also good on a sandwich or a wrap. It just tastes really nice, and it's healthy!

- 2-3 Small Cooked Beets, peeled and roughly chopped
- 2 Cloves Garlic, rough chopped
- 1 14.5 oz Can of Garbanzo Beans, rinsed and drained
- 1 tsp Lemon Zest
- ¼ cup Lemon Juice, fresh squeezed
- 3 Tbsp Warm Water
- 2 Tbsp Tahini
- ¼ cup Olive Oil
- ⅛ tsp Cumin
- Pinch of Kosher Salt
- Pinch of Black Pepper

In a food processor, add the beets, garlic, garbanzo beans, lemon zest, lemon juice, and water. Pulse several times. Then process for about 20 seconds to fully incorporate the garlic.

Add the tahini, olive oil, cumin, salt & pepper. Pulse a few times. Then process until creamy. Adjust salt to taste.

Serve at room temperature for best flavor.
Beets can be Roasted in a 450 degree (F) oven for about 45 minutes for small-medium size beets (Don't peel. Rub with olive oil before roasting). -------- Beets can also be Pressure Cooked (see my Instant Pot Beets recipe). --------- This recipe is a variation of my Classic Hummus recipe, which I've made for 20 years!
