Instant Pot Easy Tomato Soup and a grilled cheese sandwich. That is a meal you can serve me any time! This easy pressure cooker tomato soup uses canned tomatoes, and if you don’t tell them, they won’t guess!

Instant Pot Easy Tomato Soup

My friends and family know I’m a cook, of course. They just don’t always know when I take a short cut in the kitchen. Sometimes you just have to, and as long as it tastes good, who cares? Canned tomatoes are not a bad shortcut, and they taste better than the unripe tomatoes in the grocery store. I use them all the time.

I usually grow a big crop of tomatoes in my garden, but this year I was working, and nursing an injury, and it didn’t work out. So I relied on my favorite local farmers market to get my fresh tomatoes. But now that it’s Fall, they are all gone. Thank goodness canned tomatoes are so delicious! And so readily available.

Making soup in my Instant Pot electric pressure cooker is one of my favorite things to cook. If you search this website for soup, you will see many of my favorites that I have shared here.

This Instant Pot Easy Tomato Soup is so tasty, especially with a grilled cheese sandwich, and a few croutons! Warm up your belly with this great meal!

Instant Pot Easy Tomato Soup is a quick and delicious tomato soup that you can make with pantry staples.

Ingredients
  • 1 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 1 Onion, chopped
  • 4 Cloves of Garlic, pressed or minced
  • 1/4 tsp Red Pepper Flakes (optional)
  • 3 15 oz Cans of Diced or Crushed Tomatoes, with juice
  • 4 cups Broth, chicken or vegetable
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Italian Seasoning
  • 1 Tbsp Fresh Basil, (chopped) or 1 tsp dried
To Finish (Optional, but really makes this soup extra special!)
  • 1/2 cup Grated Parmesan Cheese (or more to taste)
  • 1/2 cup Heavy Cream
Garnish
  • Croutons
  • Fresh Basil
  • Parmesan Cheese
Instructions
  1. Press the Sauté button on the Instant Pot. When the display reads "Hot" add the oil and butter.

  2. Add the onion and cook until translucent, about 7 minutes (let the onion brown a little for better flavor). Stir occasionally.

  3. Add the garlic and red pepper flakes (if using) and cook for 30 seconds, stirring constantly.

  4. Add the tomatoes, broth, salt, pepper, Italian seasoning, and basil. Stir and close the lid of the pot and lock it into place. Set the steam release knob to the Sealing position.

  5. Cancel the Sauté mode. Press the Manual (or Pressure Cook) button and then the + or - button to choose 5 minutes.

  6. When the cook cycle ends, let the pot naturally release pressure for 15 minutes. Then turn the steam release knob to Venting and manually release the remaining pressure.

  7. When the pin in the lid drops, open the lid and stir the soup.

  8. Use an immersion blender to puree the soup to a creamy consistency. Or transfer to a blender and carefully blend the soup in batches. Please use caution!

  9. Stir in the Parmesan cheese and let it melt into the soup.

  10. Stir in the heavy cream.

  11. Taste and adjust salt, if desired.

  12. Garnish as desired and serve.

    I am a relatively new Instant Pot owner and am really excited about trying new and different recipes. This was the first time I’ve EVER made tomato soup from scratch. I was SO pleased at how easy this soup is to make.

    I did one minor tweak to the recipe. I kicked up the basil and thyme just a bit by using 1/4 tsp. each instead of a pinch. It didn’t overpower in the least. Yummy yummy soup! If I could give ten stars, I surely would because it is just plain THAT good. Hubby and a very dear friend were my guinea pigs and they simply RAVED about how good it was. (Both are sometimes brutally honest about things they don’t care for, so I know they weren’t just trying to appease me.
    LOL) THANK YOU for sharing!

      Brown the onion in a saucepan, then add the garlic and cook a little. Add the rest of the ingredients and stir well. Bring to a low simmer and then lower the heat and cook for 15 minutes, stirring occasionally.

    Can I omit the butter and just use the olive oil? Do you think it would change the taste of the soup?

    My husband and i cooked dinner together tonight and morning only was it fun but this was delicious!!! We had it with chicken and cheese quesadillas! I did not add the red peppers. Thank you! Keeping this recipe!

    Delicious! This is my new go-to tomato soup recipe. I love serving it with Parmesan crisps on top.

    This is a restaurant quality tomato soup. I started tasting it and couldn’t stop long enough to add crouton and parmesan. And it is very simple to make! Thank you!

    I absolutely loved this soup! Instead of the 3-15oz cans, I just used the 2-28oz cans of crushed tomatoes. I didn’t add the heavy cream and added extra red pepper flakes. I didn’t have to use the blender. It was very simple and delicious.

    I made this tonight and it is simply delicious and so easy. I used Muir Glen fire roasted tomatoes along with a pinch of sugar. We used the parm just as a garnish. My vitamix blended this soup smooth. I will be making again.

      Yes! Just cut them in half and then measure them to make sure you have enough for the recipe as witten.

    Great soup! I added a little bit of sugar to cut the tartness of the tomatoes, reduced the liquid to thicken it up a bit (on the sautee function), and used less red pepper flakes, but otherwise, it was tasty!
    My husband often likes to pick up a rotisserie chicken at the store, and I always make stock out of it afterwards. The stock gave it an amazing base flavor. Thanks for the recipe!

      Yes, I would crush them with my hands by squeezing them, like they do in Italian restaurants. That maintains some of the texture of the tomatoes, if that is what you are going for.

    I really liked it – but want to boost the flavour in the soup a bit more – any suggestions on extra herbs/seasoning/ingredients to add?

      Adding red pepper flakes with the garlic, just a pinch helps. Also, using fire roasted tomatoes is nice.

    I’m so looking forward to trying this recipe. My mother lives alone and can’t cook anymore but this is something I can make and freeze for her to have anytime. I freeze in quart size bags. Just thaw and reheat.

    I’m excited to try this recipe but will need a non-dairy substitute for the cream. Normally I use canned coconut milk, but I’m not sure what the flavour would do to this recipe. What would you suggest?

        Coconut milk in tomato soup without the Italian spices is quite good. It almost has a Thai-like quality.

    I’m a newbie to the pressure cooker world and I have a Crockpot Express. Might be a dumb question, but when you change the setting to manual pressure do you want high pressure or low pressure? Thank you in advance or any feedback! I look forward to trying this recipe!!

      Hi Sandy! For my recipes it will always be High Pressure, unless I indicate Low pressure, which I do when it is called for. I only have 1 or 2 recipes that require Low at this time. Thank you for asking!

    This sounds delicious! I’m hoping to fix tonight with some garden fresh tomatoes. Would I use the same equivalent amount of tomatoes? (45 oz in total?) Also, do you think I could sub whole milk for the cream?? Thanks!!

      Hi Danielle, Yes, you can use fresh tomatoes in this recipe. One 14.5 oz can of tomatoes equals 5 to 6 whole tomatoes (about 1 pound). So triple that for this recipe.

    I just tried this recipe and omg I am blown away. I don’t have the “Instant Pot”, but I have the Cosori brand pot and I’m new to the whole one pot meals and I’m a novice at best when it comes to cooking ? but this was SO simple to follow and delicious with or without adding the heavy cream. I’m definitely adding this to my favorites ☺️ ??

    I just made this soup using one large can of plain crushed tomatoes and 1 small can of diced tomatoes with Italian spices. I added some sprigs of fresh oregano and thyme from my garden. I kept it vegetarian-friendly by omitting the cheese & milk and using vegetable broth. And it is delicious! A wonderful, welcome addition to my Instant Pot repertoire! My 9 & 11 year old sons even asked for seconds

        To add to this question, if I want to freeze this is it better I leave the heavy cream out? I can add that when I am ready to re heat the soup.

        Did you freeze it with the heavy cream in it already?

          You can do it either way. The fresh heavy cream would have a nicer texture, in my opinion, so I would add it upon reheating.

    Is it okay to use Boiled Water or just Water instead of Broth? I’ve replaced Broth with water in another soup recipe and still came out good.

      Hi Tulsi, yes, you can use water. The flavor will be different, but you can adjust the seasonings if you need to.
