How to Make Crockpot Swamp Potatoes

Prep

  • Cut the potatoes into bite-sized pieces (not too small).
  • Chop the onion.
  • Trim and cut the green beans into 2-inch pieces.
  • Slice the smoked sausage into bite-sized rounds or pieces.

Assemble

Layering the ingredients this way is to keep the potatoes and onion on the bottom, where they will cook faster and more evenly. You can stir after about 3 hours.

  • Add potatoes and onion to the bottom of the crockpot.
  • Sprinkle with salt, pepper, Cajun seasoning, garlic powder, and olive oil. Mix well to coat the potatoes.

Slow Cook

  • Cover and cook on Low for 5–6 hours or High for 3–4 hours, until potatoes and onions are tender.
  • Stir once halfway through and again about 30 minutes before serving.

Ingredients 

  • 3 pounds Potatoes (I like red)
  • 1 medium Yellow Onion (or sweet onion)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 ½ teaspoons Cajun Seasoning (try my Homemade Blend)
  • 2 teaspoons Garlic Powder (or 1 Tablespoon minced garlic)
  • 1 ½ Tablespoons Olive Oil
  • 1 pound Fresh Green Beans (trimmed, cut in 2” pieces)
  • 1 pound Smoked Sausage (cut in bite-sized pieces)
  • 1 packet Onion Soup Mix
  • 1 stick Unsalted Butter
  • ¾ cup Chicken Broth (use more if you want extra potlikker)

Instructions 

Prep

  • Place the stick of butter on top (you can slice it if you want to), then pour in the chicken broth (don't stir).

Slow Cook

  • Cover the crockpot and cook on Low for 5-6 hours or High for 3-4 hours (I prefer Low), or until the potatoes and onion are tender to your liking. Stir once halfway through cook time, and once again about 30 minutes before serving.

    I’m interested in making this oil-free, plant-based. Omitting the sausage, oil & butter. Thoughts?

      Use veggie broth, maybe add carrots, and your favorite meat substitute. I’m not real familiar with them, but maybe Impossible meatballs, if they make them?If you are not going for completely fat-free, you could try coconut oil.
