Crockpot Swamp Potatoes

Crockpot Swamp Potatoes are a Southern comfort food favorite made with tender potatoes, smoky sausage, and green beans slow cooked in a flavorful buttery broth.

Ingredients

  • 3 pounds Potatoes (I like red)
  • 1 medium Yellow Onion (or sweet onion)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 ½ teaspoons Cajun Seasoning (try my Homemade Blend)
  • 2 teaspoons Garlic Powder (or 1 Tablespoon minced garlic)
  • 1 ½ Tablespoons Olive Oil
  • 1 pound Fresh Green Beans (trimmed, cut in 2” pieces)
  • 1 pound Smoked Sausage (cut in bite-sized pieces)
  • 1 packet Onion Soup Mix
  • 1 stick Unsalted Butter
  • ¾ cup Chicken Broth (use more if you want extra potlikker)

Instructions

Prep

  • Cut the potatoes in bite-sized pieces (not too small). Chop the onion, trim and cut the green beans in about 2-inch pieces, and slice the smoked sausage into bite-sized rounds or pieces.

Assemble

  • NOTE: Layering the ingredients this way is to keep the potatoes and onion on the bottom, where they will cook faster and more evenly. You can stir after about 3 hours.
  • Add the potatoes and onion to the bottom of the crock pot.
  • Add the salt, pepper, Cajun seasoning, garlic powder, and olive oil. Mix well to coat the potatoes.
  • Layer the green beans over the potatoes & onion (don't stir).
  • Add the sausage over the green beans in a layer (don't stir).
  • Sprinkle the packet of onion soup mix over the sausage (don't stir).
  • Place the stick of butter on top (you can slice it if you want to), then pour in the chicken broth (don't stir).

Slow Cook

  • Cover the crockpot and cook on Low for 5-6 hours or High for 3-4 hours (I prefer Low), or until the potatoes and onion are tender to your liking. Stir once halfway through cook time, and once again about 30 minutes before serving.
