- Lasagna Noodles โ Broken into pieces and cooked right in the soup.

- Spice it up: Use spicy Italian sausage or extra red pepper flakes for a little kick.
How to Make Crockpot Lasagna Soup

- Brown the Meat
In a large skillet, brown the ground beef, sausage, and onions. Drain the grease, then season with salt and pepper. - Add to the Slow Cooker
Transfer the meat mixture to your crockpot. Add the garlic, Italian seasoning, garlic powder, onion powder, and bay leaf.

- Add in the marinara sauce and diced tomatoes.
- Pour in the beef broth and mix well.

- Stir in the tomato paste until well combined.
- Cook the Soup
Cover and cook on Low for 6 to 7 hours or on High for 3 to 4 hours. - Add the Noodles
About 1 hour before serving, stir in the broken uncooked lasagna noodles and the warmed heavy cream. - Cover again and continue cooking until the noodles are tender โ about 45โ60 minutes on Low or 20โ30 minutes on High. Stir once or twice so the noodles donโt stick together.
๐ก Noodle Options: If using no-boil noodles, add them about 30 minutes before serving and cook just until tender. If cooking noodles separately, boil to al dente, drain, and stir in right before serving.

๐ก Cream Tip: Warm the heavy cream before adding so it blends smoothly and doesnโt slow down the cook time.

- Prepare the Cheese Mixture
While the soup cooks, mix together the ricotta, Parmesan, and pepper in a bowl. - Stir in the mozzarella (and lemon zest, if using). Set aside until ready to serve, or refrigerate if it will be more than 45 minutes before serving.
- Serve
Ladle the soup into bowls and top each serving with a generous scoop of the cheese mixture. The hot soup will gently melt the cheeses for that perfect lasagna flavor!
Storage for Slow Cooker Lasagna Soup
Refrigerate:
Store leftover Lasagna Soup in an airtight container in the refrigerator for up to 4 days. The noodles will continue to absorb some liquid as it sits, so the soup may thicken.
Freeze:
For best texture, freeze the soup base before adding the noodles and cream. Once cooled, transfer it to freezer-safe containers or bags and freeze for up to 3 months. When ready to serve, thaw overnight in the refrigerator, then reheat and add the noodles and cream as directed in the recipe.
Tip:
If you plan to freeze part of the soup, set that portion aside before adding the noodles and cream so it reheats well later without becoming mushy.

Reheating Lasagna Soup
- Warm the soup gently on the stove over medium-low heat, stirring occasionally. The soup thickens as it cools, so a splash of broth, water, or cream brings it right back to a cozy, just-cooked texture.
- You can also reheat individual portions in the microwave in 1-minute intervals, stirring between each.

Crockpot Lasagna Soup FAQs
Yes! If you donโt have lasagna noodles, you can use other sturdy pasta shapes like mafalda, rotini, penne, or bowtie noodles. Just be sure to add them toward the end of the cooking time so they donโt get too soft. Cook times will vary by the thickness of the pasta shape.
You can cook the soup base ahead of time and refrigerate it for up to 2 days. When youโre ready to serve, reheat it in the slow cooker or on the stove and add the noodles and heavy cream so they cook fresh. This helps keep the noodles tender and the texture perfect.
You can lighten it up by using ground turkey or chicken instead of beef and sausage, and by using part-skim ricotta and mozzarella. You can also replace the heavy cream with half-and-half, though the soup will be slightly less rich.
Yes, but itโs best to freeze the soup before adding the noodles and cream. The noodles can become mushy when thawed. Freeze the cooked soup base for up to 3 months, then thaw overnight in the fridge and reheat, adding noodles and cream just before serving.
Reheat leftover Crock Pot Lasagna Soup gently on the stove over medium-low heat, adding a splash of broth or water to loosen the soup if it has thickened. You can also reheat individual portions in the microwave. The flavors deepen overnight, making it even more delicious the next day!

Yes! To make this a dairy-free lasagna soup recipe, use coconut cream or a dairy-free heavy cream substitute in place of the heavy cream. Skip the cheese mixture and top each serving with a sprinkle of dairy-free mozzarella or Parmesan-style cheese instead. There are several great plant-based cheeses that melt nicely and still give that creamy, comforting flavor.
