This easy dinner recipe uses frozen diced hash brown potatoes O’Brien (with bell peppers and onions) to save prep time, and combines them with sliced smoked sausage, a creamy sauce, and loads of cheddar cheese.

It’s a simple, flavorful dinner recipe that is always a hit! I serve this on game nights to our friends and they always go for seconds.

Ingredients in Cheesy Kielbasa and Potato Casserole

• Cream of Chicken Soup – store-bought or try my homemade version
• Milk
• Sour Cream
• Garlic Powder, Onion Powder, Black pepper
• Onion – yellow, sweet, or white works well
• Shredded Cheddar Cheese – sharp or extra sharp recommended
• Kielbasa or Smoked Sausage – I use turkey, but use what you like
• Frozen Diced Hash Brown Potatoes O’Brien – with peppers and onions (or use plain diced frozen hash browns).

Tips & Variations

• Try Different Meat – Use cooked ground sausage, another ground meat, or stir in shredded rotisserie chicken during the last hour of cook time.
• Add Some Spice – Use spicy kielbasa for a bolder flavor, or add some hot sauce or red pepper flakes.
• Soup Variations – Try cream of mushroom or cream of celery for a different flavor base.
• Add Veggies – Stir in a cup of frozen peas & carrots or green beans during the last hour for extra veggies.
• Crisp Up the Cheese – Want crispy cheese? Spoon portions into a baking dish and broil briefly.

Low Sodium Option

  • Use low-sodium cream of chicken soup – or make it from scratch using my homemade version, which gives you full control over the salt.
  • Choose reduced-sodium kielbasa – many brands offer a lower sodium variety of smoked sausage.
  • Use no-salt-added frozen hash browns – check for hidden salt in the ingredient list.

How to Make Crockpot Cheesy Potatoes with Kielbasa (Dump-and-Go!)

Make the sauce:
• In a large bowl, whisk together the cream of chicken soup, milk, sour cream, garlic powder, onion powder, and black pepper until smooth.
Add the mix-ins:
• Stir in the diced onion, half of the shredded cheddar cheese, and the kielbasa slices. No pre-cooking needed!

• Fold in the frozen hash brown potatoes O’Brien and stir until well combined.

Assemble in the crockpot:
• Transfer the mixture to a greased slow cooker or use a crockpot liner for easy cleanup. Sprinkle the remaining cheese evenly on top.
Cook:
• Cover and cook on low for 5 to 6 hours or high for 3 to 4 hours, until hot and bubbly.

What to Serve with Hash Brown and Kielbasa Crockpot Casserole

This rich and filling dish pairs well with:
Green Beans or Broccoli
A crisp salad with vinegar-based dressing
Applesauce or Coleslaw for a little contrast

Storage & Reheating

Store: Refrigerate leftovers for up to 4 days in an airtight container.
Reheat: Microwave or reheat in a 350°F oven until warmed through.
Freeze: Let cool completely, then freeze for up to 2 months. Thaw before reheating.

Ingredients
  • 1 10-ounce can Cream of Chicken Soup or try my homemade
  • ½ cup Milk
  • ½ cup Sour Cream
  • 1 ½ teaspoons Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Black Pepper
  • 1 small Onion, diced
  • 2 cups Shredded Cheddar Cheese, divided
  • 1 13-ounce package Kielbasa or Smoked Sausage (cut in half-moon chunks)
  • 1 32-ounce bag Frozen Diced Hash Brown Potatoes (I use the O’Brien)
Instructions
  1. To a large bowl, add the soup, milk, sour cream, garlic powder, onion powder, and pepper. Mix well.
  2. Stir in the diced onion, half of the shredded cheese, and kielbasa. Mix well.
  3. Next, add the diced hash browns and mix together.
  4. Add the mixture to a greased slow cooker (or use a crockpot liner).
  5. Sprinkle remaining cheese over the top.
  6. Cover and cook on low for 5-6 hours or high for about 3-4 hours.

Recipe Notes

Meat

This recipe can also be made with browned ground meat (beef, turkey, chicken, or pork). I recommend adding smoked paprika and extra garlic powder for flavor.
