Gather the ingredients. Add ingredients to a mixing bowl.

dough in a bowl, dough balls
Mix ingredients together until creamy. Scoop into balls and place on parchment lined tray. Chill in the fridge for 30 minutes. Itโ€™s important that you do not skip the chilling step. The air fryer will make the cookies spread and be too crumbly.

Place the dough balls in the air fryer basket and press with a fork one way, then the other way to make a crosshatch. Air fry, then move to a rack after letting them sit in the air fryer basket for 4 minutes.

Time Tips for These Cookies

  • Each air fryer has various cooking settings. If your air fryer doesnโ€™t have a 370ยฐ F setting, choose the closest temperature below it, as opposed to over it. Time may need to be adjusted.
  • Putting more or less cookies doesnโ€™t require you to adjust the cook time or rest time. Just don’t let them touch.
  • Itโ€™s best to not touch the cookies until theyโ€™ve set for a minimum of 4 minutes. This allows them to set up and not fall apart when removed from the air fryer.

Tips for Cookies in the Air Fryer

  • The chilling step keeps them from spreading too much and keeps them from being a crumbly mess when leaving the air fryer.
  • I like to shape the parchment paper to the bottom of my air fryer, then pull it out and prepare my cookies on it. This way, I can just set the parchment paper back in it without having to set one cookie at a time inside the air fryer.

  • Each air fryer is a different shape. Mine allowed for 4-6 cookies at a time, but your shape might not allow that many, or it may allow for more. Be sure to give enough space for the cookies to spread a bit.
  • This cookie dough is very sticky, so itโ€™s best to not get your hands involved in the scooping process and stick to a scoop or spoon.

Ingredients

  • 1 Cup Creamy Peanut Butter
  • ยพ Cup Sugar (plus more for dusting)
  • 1 large Egg

Instructions

  • Combine all three ingredients in a medium mixing bowl. Mix until fully combined.
  • Chill in the fridge for 30 minutes.
  • Using a 1 ยฝ-inch cookie scoop, or heaping tablespoon, scoop the dough onto parchment paper.
  • Using a fork, press the cookie flat, first one direction, then again from the opposite direction to make a crosshatch pattern on top.
  • Line the bottom of your air fryer with parchment paper. Be sure to not have extra parchment paper running up the side of the air fryer or it will get caught by the air and fold over the cookies.
  • Place as many cookies in your air fryer as will fit, while giving each cookie a half inch of space. I am able to do about 4-6 at a time.
  • Set your air fryer at 370ยฐ F and cook them for 4 minutes. Then let them rest in the air fryer for another 4 minutes before removing to a rack.
  • Sprinkle with some sugar while still hot (optional). Then use a spatula to move to a plate to cool.
  • Repeat until youโ€™ve used up your batter. Enjoy!

Iโ€™m diabetic and wondering if I could substitute the sugar for monk fruit and the peanut butter with no sugar. Would I need to adjust anything to do that?

    1. Sandy says:

Hi! Thanks so much for your question!

Yes, you can definitely substitute the sugar with monk fruit sweetener and use a no-sugar peanut butter for a lower-sugar version thatโ€™s more diabetic-friendly. Here are a few tips to keep in mind:

      • Monk fruit sweetener usually works as a 1:1 replacement for sugar in baking, so you can swap it in the same amount. However, some monk fruit blends may contain other ingredients (like erythritol), which can slightly affect texture or sweetness, so you might want to start with the same amount and adjust next time if needed.
      • Using a no-sugar peanut butter is a great choice to keep added sugars low. Just make sure itโ€™s smooth and not too oily, as texture can impact how the cookie comes together.
      • Because sugar helps with browning and crisping, your cookies might come out a little lighter in color and maybe softer, but theyโ€™ll still taste delicious!
      • Keep an eye on the cookies as they cook since sometimes sugar substitutes can change baking time a bit โ€” your air fryer might need a minute less or more.

I hope that helps! Let me know how they turn out if you give it a try!
