• Bone-in Pork chops – At least 1” thick to 1 ½" thick.
• Salt & Black Pepper – Just a little, to season the pork chops.
• Olive Oil – Or vegetable oil.
• Yellow Onion – Or a sweet onion.
• Chopped Mushrooms – Baby bella or cremini mushrooms have great flavor, but white mushrooms work too.
FOR THE GRAVY:
• Cream of Mushroom Soup – Low sodium, if possible, or try my homemade version.
• Spices: Smoked Paprika, Garlic Powder, Onion Powder, Creole Seasoning
• Worcestershire Sauce
• Dijon Mustard
• No-Salt Beef Broth – Or Low Sodium.

How to Make Crockpot Pork Chops with Mushroom Gravy

Season & Sear the Pork Chops:
• Season chops with salt and pepper, then brown both sides in a skillet with olive oil.

• Place browned pork chops into the slow cooker.
Sauté the onions (optional):
• While your skillet is still hot, quickly sauté the onion for extra flavor (or just add them raw if you're short on time).

Make the gravy:
• While the chops are browning, in a bowl, whisk together the cream of mushroom soup, smoked paprika, garlic powder, onion powder, Creole seasoning, Worcestershire sauce, and Dijon mustard.
• Then whisk in the beef broth until smooth.

Slow cook:
• Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, stirring once if you can.

Ingredients
  • 4-6 Bone-in Pork Chops (at least 1” thick)
  • Salt & Black Pepper (Just a little, for the chops)
  • 1 Tablespoon Olive Oil
  • 1 Yellow Onion, diced
  • 2 cups Chopped Mushrooms (6 ounces)
Gravy
  • 2 cans Cream of Mushroom Soup (try my homemade recipe)
  • ½ teaspoon Smoked Paprika
  • 1 ½ teaspoons Garlic Powder
  • ½ teaspoon Onion Powder
  • 1 teaspoon Creole Seasoning
  • 1 Tablespoon Worcestershire Sauce
  • 2 teaspoons Dijon Mustard
  • ¾ cup No-Salt Beef Broth (or Low Sodium)
Instructions
Brown the Pork Chops
  1. Season the pork chops with salt and black pepper. Heat the olive oil in a large skillet and brown the pork chops on both sides. Place them in the crockpot.
  2. While the skillet is still hot you can sauté the onion, though this step is optional.
  3. Add the onion and the chopped mushrooms to the crockpot.
Make the Gravy
  1. While the chops are browning, mix up the gravy by adding to a medium bowl, the mushroom soup, smoked paprika, garlic powder, onion powder, Creole seasoning, Worcestershire sauce, and Dijon mustard. Whisk together.
  2. Whisk in the beef broth until well combined, then pour mixture into the crockpot.
Slow Cook
  1. Place the lid on the slow cooker and cook on Low for 6-8 hours, High 3-4 hours stirring once, if possible.
Serve
  1. Serve the pork chops with the gravy that makes itself while the pork chops are cooking. Just whisk it and pour it over the meat, and it is also delicious over mashed potatoes and rice.
