Slow Cooker Pork Chops with Mushroom Gravy

Ingredients 

  • 4-6 Bone-in Pork Chops (at least 1โ€ thick)
  • Salt & Black Pepper (Just a little, for the chops)
  • 1 Tablespoon Olive Oil
  • 1 Yellow Onion, diced
  • 2 cups Chopped Mushrooms (6 ounces)

Gravy

  • 2 cans Cream of Mushroom Soup (try my homemade recipe)
  • ยฝ teaspoon Smoked Paprika
  • 1 ยฝ teaspoons Garlic Powder
  • ยฝ teaspoon Onion Powder
  • 1 teaspoon Creole Seasoning
  • 1 Tablespoon Worcestershire Sauce
  • 2 teaspoons Dijon Mustard
  • ยพ cup No-Salt Beef Broth (or Low Sodium)

Instructions 

Brown the Pork Chops

  • Season the pork chops with salt and black pepper. Heat the olive oil in a large skillet and brown the pork chops on both sides. Place them in the crockpot.
  • While the skillet is still hot you can sautรฉ the onion, though this step is optional.
  • Add the onion and the chopped mushrooms to the crockpot.

Make the Gravy

  • While the chops are browning, mix up the gravy by adding to a medium bowl, the mushroom soup, smoked paprika, garlic powder, onion powder, Creole seasoning, Worcestershire sauce, and Dijon mustard. Whisk together.
  • Whisk in the beef broth until well combined, then pour mixture into the crockpot.

Slow Cook

  • Place the lid on the slow cooker and cook on Low for 6-8 hours, High 3-4 hours stirring once, if possible.

Serve

  • Serve the pork chops with the gravy that makes itself while the pork chops are cooking. Just whisk it and pour it over the meat, and it is also delicious over mashed potatoes and rice.

    Has anyone made this with boneless pork chops? Did you have to adjust cooking time?

      For boneless pork chops, theyโ€™ll usually cook a little faster than bone-in. I recommend checking them around the 4-hour mark on Low (or about 2 hours on High), since they can dry out more quickly. Youโ€™ll want them tender but not overcooked.

    Allergic to mushrooms. Is there a swap you’d recommend for them?

      You can omit the mushrooms, and swap the mushroom soup with cream of chicken or cream of celery soup instead. Either one will still give you a creamy, flavorful gravy (I do prefer the chicken, and I have a recipe for it if you don’t want to use the canned). You could also add some chopped carrots for extra flavor and a little sweetness. That should work nicely!
