Instant Pot Cube Steak with Onion Gravy

Instant Pot Cube Steak with Onion Gravy is a tasty meal. The cubed steak comes out fork tender, and the onion gravy is delicious! Pressure cooker cube steak with onion gravy is a perfect weeknight dinner that the family will enjoy.

Instant Pot Cube Steak with Onion Gravy

Today I’m sharing another retro classic meal from my childhood. The difference is that I’m making this Cube Steak recipe in the Instant Pot® electric pressure cooker!

It’s nice to have a meal of comfort food that everyone will eat. When cubed steak is cooked in the pressure cooker, the meat is so tender you can cut it with a fork!

The savory onion gravy is yummy, and perfect for pouring over some mashed potatoes or cooked hot rice.

What is Cube Steak?

Cube steak (or cubed steak) is a cut of tough beef, often top round or top sirloin, that has been manually or mechanically tenderized.

This is a process that flattens the meat and leaves a characteristic pattern of small indentations on the surface (cubing).

Cubed steak is sometimes called “Minute Steak” as this thin steak is fast cooking.

The reason for cubing the meat is that these are tougher cuts, but also because it stretches out the amount of servings you can get from a cut.

Making Instant Pot Cube Steak is easy!

Here are the steps to a fantastic meal of cubed steak:

After browning the cube steaks, you will remove them to a plate while you brown the onion. Here are the cube steaks before spreading the soup over them. They are not fully cooked at this point, only browned.

Adding the soup last, and not stirring it in, will ensure that you have plenty of thin liquid (beef broth is in there) to bring the pot to pressure, and avoid the burn message!

Serve these tasty pressure cooker cube steaks with mashed potatoes, rice, or even mashed cauliflower. Yum!

Instant Pot Cube Steak with Onion Gravy is delicious, and the meat is very tender. Great with mashed potatoes or rice!

Ingredients
  • 1/3 cup Flour
  • 1 tsp Kosher Salt (or 3/4 tsp table salt)
  • 1/2 tsp Pepper
  • 1 tsp Garlic Powder
  • 4 Cube Steaks (about 6 oz ea.)
  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter, unsalted
  • 1 lg Onion, cut in half, then sliced thick
  • 1 (14 oz) can Beef Broth, low sodium
  • 1 (1 oz) packet Onion Soup Mix
  • 1 (10.5 oz) can Cream of Mushroom Soup, condensed (low sodium, if possible)
Instructions
  1. Mix together the flour, salt, pepper, and garlic powder. Spread the mixture out on a plate or shallow dish.

  2. Coat both sides of the cube steaks in the flower mixture (dredge). Gently shake off the excess. Set the steaks aside.

  3. Turn on the Sauté setting. When it is hot, add the oil.

  4. Brown 2 of the cube steaks on both sides, but don't cook all the way through. Do this again for the remaining two. Set aside.

  5. Add the butter to the pot and then add the onion. Cook, stirring occasionally, scraping the bottom of the pot to loosen the browned bits (fond), until they are softened, but not completely cooked (still a little firm). Use a splash of the broth if needed to soften the fond.

  6. Stir in the beef broth, and scrape the bottom of the pot to get up all of the remaining browned bits.

  7. Add the cube steaks back in on top of the onions.

  8. Sprinkle the onion soup mix over the steaks.

  9. Spread the cream of mushroom soup over the steaks.

  10. Close the lid and set the steam release knob to the Sealing position.

  11. Turn off the sauté setting.

  12. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 20 minutes. High Pressure. The pot will take several minutes to come to pressure.

  13. When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes (5 minute natural release). Then turn the steam release knob to the Venting position to release the remaining steam/pressure.

  14. When the pin in the lid drops back down, open the lid.

  15. Remove the cube steaks to a serving platter.

  16. Stir the onion gravy. It shouldn't need thickening, but if it does, you can turn on the sauté setting and stir in a corn starch slurry (1 Tbsp corn starch and 1 Tbsp cold water mixed together). Stir as it thickens and then turn off the pot.

  17. Serve over mashed potatoes, rice, or mashed or riced cauliflower.

    My family loved this recipe! I followed it exactly, added a nice dish of mashed potatoes and some bread. We almost licked the pot.. lol

    I’m making it again today for Sunday dinner. By far the best cube steak recipe I have found. I buy my cube steaks from a local family farm and following your recipe makes them perfect! And I don’t even like cream of mushroom soup..

    Yum. Made this the other night. Everyone loved it. My kids even ate it as leftovers which they never, ever touch leftovers (doubled the recipe to have enough for leftovers). Since I doubled it, I sautéed the onions and then the steak on the stove top in 2 pans since I had so much. I poured the beef broth in one pan to get the yummy bit off the pan and poured all that into the instapot. The other pan, I cooked some corn in the goodness left behind. Some mashed potatoes as well. The gravy, so much gravy and came out perfect, no thickening needed. We chowed it for lunch today. Great comfort food. Thanks for the recipe.

    This is the 2nd time I made this and won’t be the last. So yummy! So easy! I used Better than Bullion in 14 ounces of water in place of beef broth because that’s what I had on hand. The gravy was so rich and wonderful in flavor. Thank you so much for this recipe!

    I found this to be easy to prepare, and my husband and I loved it. I didn’t have onion soup mix but I had brown gravy mix. There was less sodium, fresh onion, and it was delicious. I will make this again! Thank you!

    This was so easy and SO GOOD! I don’t think I have ever had cube steaks that were that tender! We did add a cornstarch slurry because we like the gravy a little thicker, and it was perfect. This is a definite keeper!

    I like to cook with cooking wine. can i replace the stock with the same amount of wine. plus do i need to double any of the ingridents to accomidate more people.

      You can use cooking wine, however it is good to add some beef broth for the rich beef flavor. If you double the recipe, double everything. This way you will have a good amount of gravy. Keep the cook time the same.

    We received several packages of cube steak when we purchased half a butchered cow. First time I made cube steak, I thought we were eating shoe leather! A search for a better method found this site. We have a saying around here when something is better than excellent…it’s “bite your hand off good!” And that’s what this meal was!!

    Because we watch our carbs, I skipped the flour dredge and went straight to sauté with some salt & pepper. I served over 50/50 mashed taters and cauliflower. Who would think a few simple ingredients and 20 minutes in an Instant Pot would produce such a tender, “bite your hand off good” meal!!

    Made it last night! Added a pack of mushrooms, and extra pepper, when sautéing onions. When it was done I added 1/2 pound of cooked Egg Noodles to the thicken sauced, and a dash of truffle salt. My 1.5 year old devoured it! so good

    Loved it! I didn’t have garlic powder, used garlic salt… didn’t have cream of mushroom…used cream of celery and added half a bell pepper with my onions…Mashed potatoes with peas and carrots with warm sweet Hawaiian rolls! Making again!!

      Hi Joan! Yes, as long as you can set it to pressure cook at high pressure they will work.

      On the stove I cook them low and slow for 2 hours. You want them to be tender, so a longer cook time is better.

    I’ve made this recipe twice now and will keep on making it…it’s a fan favorite! I add a full package of sliced mushrooms in when I put it the onions. It has turned out great each time. I freeze any remaining gravy to put over potatoes during another meal. Thanks for the great recipe!

    Hi Sandy…. I made this lastnight….the flavor was fabulous but I found some of the steak dissolved kibda… can instant pots vary in temperature? I made a stew the other day 35 mins hp… 15 nr and had the same exact problem… stating to think I need to drop the time but not sure by how much.
    Thank you for this… love the flavor… do you have a cook book yet? Big fan!

      Hi Sue! I have been hearing that some of the pots seem to be cooking hot. In that case I would shorten the cook time, or maybe even switch to low pressure, if yours has that option. You will need to test it. About my cookbook… It’s on the way!! I’m super excited that it will be out before Black Friday on Amazon. If you want an email when it launches, I can put you on the list.
