I’ve heard this recipe called stick of butter rice casserole, and french onion rice casserole because of the soup in it. We have always called it Hamburger Rice Casserole. It’s delicious no matter the name!

Lean Ground Beef โ€“ Or use ground turkey, ground chicken, or ground sausage
Chopped Mushrooms โ€“ Optional, but adds an earthy flavor
Bell Pepper โ€“ Use any color
Seasonings โ€“ Salt, Black Pepper, Ranch Seasoning
Long Grain White Rice โ€“ uncooked
French Onion Soup โ€“ Condensed

Recipe Tips & Variations

  • Make it Cheesy: Add shredded cheddar or mozzarella on top during the last 10 minutes of baking.
  • Use Brown Rice (not tested): You can try substituting brown rice by increasing the total liquid by ยฝ to 1 cup and extending the bake time by 15โ€“25 minutes. Soaking the rice for 30 minutes beforehand may help with even cooking.
  • Swap the Soup: If you don’t have French onion soup, you can substitute it with dry onion soup mix. Use 3 to 4 packets of onion soup mix and combine with 3ยฝ cups of water to replace the 2 (10.5 oz) cans. For richer flavor, you can replace part of the water with beef broth. Taste and adjust seasoning, as dry mixes may be slightly saltier.
  • Use as a Filling: Try this beef, rice and veggie mixture stuffed into bell peppers or baked spaghetti squash halves.
  • Make it a Freezer Meal: Assemble, cover tightly, and freeze before baking. Thaw overnight and bake as directed.

How To Make Hamburger Rice Casserole

โ€ขย Preheat your oven to 425ยฐF and spray a 9ร—13-inch baking dish with nonstick cooking spray.
Cook the Onion & Meat
โ€ข In a large skillet, heat the olive oil and sautรฉ the chopped onion for about 4 minutes until softened. Add the ground beef and cook until browned, about 8 minutes. Drain any grease.

โ€ข Stir in the mushrooms and the garlic. Cook for 5 minutes until softened.

โ€ข Transfer the beef mixture to the prepared baking dish. Sprinkle the uncooked rice evenly over the top.

Ingredients 

  • 2 Tablespoons Olive Oil
  • 1 Yellow Onion, chopped
  • 1 pound Lean Ground Beef (or turkey, chicken)
  • 2 cups Chopped Mushrooms, (optional)
  • 3 cloves Garlic, minced
  • 1 Bell Pepper, chopped (any color)
  • ยฝ teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 Tablespoons Ranch Seasoning
  • 2 cups Long Grain White Rice, uncooked
  • 2 10.5-ounce cans French Onion Soup
  • 4 cups Beef Broth (or beef consommรฉ)
  • 1 stick Unsalted Butter, sliced (ยฝ cup)

Garnish

  • Chopped Green Onions or Chives

Instructions 

  • Preheat oven to 425ยฐF. Spray a 9ร—13-inch baking dish with nonstick cooking spray and set aside.
  • Heat a large skillet over medium heat, then add olive oil and the chopped onion. Sautรฉ the onion about 4 minutes until softened.
  • Add the ground beef. Cook until browned (about 8 minutes). Drain any grease.
  • Add the chopped mushrooms and cook until softened, about 5 minutes.
  • Add the garlic, bell pepper, salt, pepper, and ranch seasoning. Stir well.
  • Add the ground beef mixture to the prepared baking dish.Spread the uncooked rice evenly over the meat mixture.
  • Pour the French onion soup evenly over the rice.
  • Pour the beef broth over the top.โ€จAdd the butter pats on top.
  • Cover tightly with aluminum foil and bake for 40 minutes.
  • After 40 minutes, remove the foil and continue baking, uncovered, for 20 more minutes, or until the rice is cooked and is tender.
  • Fluff the rice with a fork, garnish as desired, and serve.

Notes

Cheese can be added to the top of the casserole in the last few minutes of cooking.
This mixture is delicious stuffed into bell peppers or spaghetti squash, etc.
