This is a tasty, one-pan meal that’s easy to make and feeds a crowd. An easy casserole with beef and rice that checks all the boxes. It’s packed with protein and veggies, baked in a rich broth of French onion soup, beef stock, and seasonings.

This delicious beef and rice casserole comes together easily with pantry staples. Plus, it’s easy to change up the protein, add cheese, or stuff it into peppers for a whole new spin!

I've heard this recipe called stick of butter rice casserole, and french onion rice casserole because of the soup in it. We have always called it Hamburger Rice Casserole. It's delicious no matter the name!

Ingredients in Hamburger Rice Casserole

Olive Oil
Aromatics – Yellow Onion, garlic
Lean Ground Beef – Or use ground turkey, ground chicken, or ground sausage
Chopped Mushrooms – Optional, but adds an earthy flavor
Bell Pepper – Use any color
Seasonings – Salt, Black Pepper, Ranch Seasoning
Long Grain White Rice – uncooked
French Onion Soup – Condensed
Beef Broth – Or use beef consommé
Unsalted Butter
Garnish – Green Onions or Chives

Recipe Tips & Variations

  • Make it Cheesy: Add shredded cheddar or mozzarella on top during the last 10 minutes of baking.
  • Use Brown Rice (not tested): You can try substituting brown rice by increasing the total liquid by ½ to 1 cup and extending the bake time by 15–25 minutes. Soaking the rice for 30 minutes beforehand may help with even cooking.
  • Swap the Soup: If you don't have French onion soup, you can substitute it with dry onion soup mix. Use 3 to 4 packets of onion soup mix and combine with 3½ cups of water to replace the 2 (10.5 oz) cans. For richer flavor, you can replace part of the water with beef broth. Taste and adjust seasoning, as dry mixes may be slightly saltier.
  • Use as a Filling: Try this beef, rice and veggie mixture stuffed into bell peppers or baked spaghetti squash halves.
  • Make it a Freezer Meal: Assemble, cover tightly, and freeze before baking. Thaw overnight and bake as directed.

How To Make Hamburger Rice Casserole

Prep
• Preheat your oven to 425°F and spray a 9×13-inch baking dish with nonstick cooking spray.
Cook the Onion & Meat
• In a large skillet, heat the olive oil and sauté the chopped onion for about 4 minutes until softened. Add the ground beef and cook until browned, about 8 minutes. Drain any grease.

• Stir in the mushrooms and the garlic. Cook for 5 minutes until softened.

• Add bell pepper, salt, pepper, and ranch seasoning, and mix well.

Assemble the Casserole
• Transfer the beef mixture to the prepared baking dish. Sprinkle the uncooked rice evenly over the top.

• Pour the French onion soup and beef broth evenly over the rice.

Bake
• Cover tightly with foil and bake for 40 minutes.

• Remove the foil and continue baking uncovered for 20 more minutes, or until the rice is tender.
Fluff & Garnish
• Fluff the casserole with a fork, garnish with green onions or chives, and serve!

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Yellow Onion, chopped
  • 1 pound Lean Ground Beef (or turkey, chicken)
  • 2 cups Chopped Mushrooms, (optional)
  • 3 cloves Garlic, minced
  • 1 Bell Pepper, chopped (any color)
  • ½ teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 Tablespoons Ranch Seasoning
  • 2 cups Long Grain White Rice, uncooked
  • 2 10.5-ounce cans French Onion Soup
  • 4 cups Beef Broth (or beef consommé)
  • 1 stick Unsalted Butter, sliced (½ cup)
Garnish
  • Chopped Green Onions or Chives
Instructions
  1. Preheat oven to 425°F. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
  2. Heat a large skillet over medium heat, then add olive oil and the chopped onion. Sauté the onion about 4 minutes until softened.
  3. Add the ground beef. Cook until browned (about 8 minutes). Drain any grease.
  4. Add the chopped mushrooms and cook until softened, about 5 minutes.
  5. Add the garlic, bell pepper, salt, pepper, and ranch seasoning. Stir well.
  6. Add the ground beef mixture to the prepared baking dish.Spread the uncooked rice evenly over the meat mixture.
  7. Pour the French onion soup evenly over the rice.
  8. Pour the beef broth over the top.
Add the butter pats on top.
  9. Cover tightly with aluminum foil and bake for 40 minutes.
  10. After 40 minutes, remove the foil and continue baking, uncovered, for 20 more minutes, or until the rice is cooked and is tender.
  11. Fluff the rice with a fork, garnish as desired, and serve.
Recipe Notes

Cheese can be added to the top of the casserole in the last few minutes of cooking.

This mixture is delicious stuffed into bell peppers or spaghetti squash, etc.
