Recipe Tips & Variations
- Make it Cheesy: Add shredded cheddar or mozzarella on top during the last 10 minutes of baking.
- Use Brown Rice (not tested): You can try substituting brown rice by increasing the total liquid by ½ to 1 cup and extending the bake time by 15–25 minutes. Soaking the rice for 30 minutes beforehand may help with even cooking.
- Swap the Soup: If you don't have French onion soup, you can substitute it with dry onion soup mix. Use 3 to 4 packets of onion soup mix and combine with 3½ cups of water to replace the 2 (10.5 oz) cans. For richer flavor, you can replace part of the water with beef broth. Taste and adjust seasoning, as dry mixes may be slightly saltier.
- Use as a Filling: Try this beef, rice and veggie mixture stuffed into bell peppers or baked spaghetti squash halves.
- Make it a Freezer Meal: Assemble, cover tightly, and freeze before baking. Thaw overnight and bake as directed.
