Cauliflower "Rice" is super easy to make, and when roasted, is delicious and healthy! This vegetable side dish is full of flavor, and has a nice texture.

Ingredients
16ozRiced Caulifloweruncooked (about 1 large head)
1Carrotchopped into small pieces
½Small Sweet Onionsliced thin
½inchKnob of Gingergrated
1 ½TbspOlive Oil
¼tspKosher Salt
¼tspBlack Pepper
Instructions
Heat oven to 425 degrees.
In a mixing bowl, add the cauliflower, chopped carrot, sliced onion, grated ginger, and mix well.
Add the olive oil, salt & pepper and stir to combine, and to coat all of the vegetables in the oil.
Spread the vegetables in a single layer onto a baking sheet lined with parchment paper.
Bake for 30 minutes, stirring halfway through.
Notes
If not using pre-riced cauliflower: Place raw cauliflower florets in a food processor and pulse several times until it resembles rice. You may have to do this in 2 batches.
