Ingredients
Pasta
1lbCapellini(thin spaghetti)
2tspKosher Salt
1tspOlive Oil
Shrimp
1lbLarge Shrimp
3tspOlive Oil
1cloveGarlic,peeled
Sauce
2TbspOlive Oil
4TbspButter
Juice of 2 Lemons
Zest of 2 Lemons
1tspKosher Salt
½tspBlack Pepper
Pinch of Red Pepper Flakes
Garnish
Parmesan Cheese
Instructions
Start pasta cooking in a pot of boiling water with 2 tsp Kosher salt and 1 tsp of olive oil, until al dente, about 9 minutes. Drain.
While Pasta is Cooking
In a large frying pan, heat 3 tsp of olive oil and add the whole garlic clove. Stir the garlic until you start to smell it, being careful not to burn it. Remove it and discard.
Add the shrimp and stir, cook until dark pink and no longer translucent. Remove from pan and set aside.
Add 2 Tbsp olive oil and the butter to the same pan and melt butter.
Add the lemon juice, zest, salt, pepper, and red pepper flakes and stir until heated through.
Add the pasta to the pan and use tongs to mix the pasta with the sauce.
Add the shrimp.
Serve immediately.
Garnish with parmesan.
Notes
If you don't want to use shrimp, this tastes wonderful without it!
