Ingredients

  • 2 Tbsp Olive Oil
  • ½ Onion, diced
  • 1 lb Lean Ground Turkey or Beef (97% lean)
  • 3 cloves Garlic, pressed
  • 2 tsp Ginger Powder
  • 1 tsp Chili Powder
  • 2 tsp Smoked Paprika
  • ¼ - ½ tsp Red Pepper Flakes
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 2 Tbsp Soy Sauce
  • 2 tsp Dijon Mustard
  • 2 tsp Apple Cider Vinegar
  • ¼ cup Teriyaki Sauce
  • 2 Tbsp Brown Sugar
  • 1 (20 oz) can Crushed Pineapple (with juice)
  • ½ cup Ketchup
  • 1 (6 oz) can Tomato Paste

Garnish

  • 6 Pineapple Rings
  • 6 Hawaiian or Whole Wheat Hamburger Buns

Instructions

  • Turn on the pot's Sauté setting. When it is hot, add the olive oil and the onion and cook for two minutes, stirring occasionally.
  • Add the ground meat and stir, breaking it up. Cook about 3 minutes.
  • Add the garlic and stir.
  • Add the ginger, chili powder, smoked paprika, red pepper flakes, salt, and pepper. Stir well.
  • Add the soy sauce, Dijon, vinegar, teriyaki sauce, and brown sugar. Stir well, and cook for 1 minute, stirring frequently.
  • Add the crushed pineapple and stir.
  • Add the ketchup and tomato paste, but do not stir. Leave it sitting on top. Turn off the Sauté setting.
  • Close the lid and set the steam release knob to the Sealing position.
  • Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 4 minutes. High Pressure. The pot will take several minutes to come to pressure.
  • When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes. Then turn the steam release knob to the Venting position to release the remaining steam/pressure.
  • When the pin in the lid drops back down, open the lid.
  • Stir the sloppy joe mixture.
  • Serve on Hawaiian or whole wheat hamburger buns and top with a pineapple ring before adding the top bun. Aloha!
