Ingredients
6TablespoonButter
¾cupFlour
¾cupplus 1 Tablespoon Sugar
1teaspoonBaking Powder
¼teaspoonSalt
¾cupMilk
¼teaspoonAlmond Extract(optional)
2cupsFresh Peaches(peeled, pit removed, sliced)
Instructions
Adjust oven rack to lower-middle position and heat oven to 350 degrees.
Put butter in 8-inch square baking dish or 8-10-inch cast iron skillet. Set in oven to melt.
In small bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.
Add milk and almond extract. Whisk gently, until just incorporated into dry ingredients. Don’t over mix!
When butter has melted, remove pan from oven. Pour batter into pan, without stirring it into butter, then arrange fruit over the batter.
Sprinkle fruit with remaining Tablespoon of sugar.
Bake until batter browns, about 40 to 50 minutes.
Serve warm with a scoop of vanilla ice cream.
Notes
Bake in a 8-inch to 10-inch cast iron pan or a 8"x8" baking dish.
