Fresh Peach Cobbler

One of the most comforting of comfort foods! A fresh peach cobbler with a scoop of vanilla ice cream is good any time of the year, especially when the peaches are ripe on the trees!

Ingredients

  • 6 Tablespoon Butter
  • ¾ cup Flour
  • ¾ cup plus 1 Tablespoon Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¾ cup Milk
  • ¼ teaspoon Almond Extract (optional)
  • 2 cups Fresh Peaches (peeled, pit removed, sliced)

Instructions

  • Adjust oven rack to lower-middle position and heat oven to 350 degrees.
  • Put butter in 8-inch square baking dish or 8-10-inch cast iron skillet. Set in oven to melt.
  • In small bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.
  • Add milk and almond extract. Whisk gently, until just incorporated into dry ingredients. Don’t over mix!
  • When butter has melted, remove pan from oven. Pour batter into pan, without stirring it into butter, then arrange fruit over the batter.
  • Sprinkle fruit with remaining Tablespoon of sugar.
  • Bake until batter browns, about 40 to 50 minutes.
  • Serve warm with a scoop of vanilla ice cream.

Notes

Bake in a 8-inch to 10-inch cast iron pan or a 8"x8" baking dish.
