Chorizo Tomato Sauce is a delicious, rich tasting sauce that is good on polenta, spaghetti squash, pasta, and potatoes. This sauce is also quick to cook up!
Heat a large skillet on medium, and add chorizo. Brown the meat until it is done. Drain any fat and remove from pan. Set aside.
Put pan back on the heat and add the olive oil.
Add the onion and cook, stirring occasionally, until mostly translucent.
Add the garlic and the spices. Stir well to incorporate, and cook for a minute.
Stir in the tomato sauce, sugar, and roasted red pepper, water, and diced tomatoes.
Add the sausage back in. Turn heat to medium-low and simmer for 10 minutes, stirring occasionally.
Serve immediately.
*Chorizo is usually pretty salty, so I don't recommend adding salt until after you taste it. I never add salt to this sauce.
Also, chorizo is spicy! If you don't like your sauce too hot, try ½ chorizo and ½ Italian or breakfast sausage to cut the heat!
This sauce reheats well on med-low heat. Add a little water if too thick.
