Fresh Peach Cobbler

One of the most comforting of comfort foods! A fresh peach cobbler with a scoop of vanilla ice cream is good any time of the year, especially when the peaches are ripe on the trees!

Ingredients

  • 6 Tablespoon Butter
  • ¾ cup Flour
  • ¾ cup plus 1 Tablespoon Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¾ cup Milk
  • ¼ teaspoon Almond Extract (optional)
  • 2 cups Fresh Peaches (peeled, pit removed, sliced)

Instructions

  1. Adjust oven rack to lower-middle position and heat oven to 350 degrees.
  2. Put butter in 8-inch square baking dish or 8-10-inch cast iron skillet. Set in oven to melt.

  3. In small bowl, whisk together flour, ¾ cup sugar, baking powder, and salt.

  4. Add milk and almond extract. Whisk gently, until just incorporated into dry ingredients. Don’t over mix!
  5. When butter has melted, remove pan from oven. Pour batter into pan, without stirring it into butter, then arrange fruit over the batter.
  6. Sprinkle fruit with remaining Tablespoon of sugar.

  7. Bake until batter browns, about 40 to 50 minutes.
  8. Serve warm with a scoop of vanilla ice cream.

Bake in a 8-inch to 10-inch cast iron pan or a 8"x8" baking dish.
