Banana Bread Baked Oatmeal

Ingredients

  • 4 Tablespoons Melted Butter, or melted coconut oil
  • 4 Ripe Bananas, divided
  • 2 Eggs
  • cup Brown Sugar, or real maple syrup
  • 1 ½ teaspoons Baking Powder
  • ½ teaspoon Salt
  • 2 teaspoons Cinnamon
  • ½ teaspoon Nutmeg
  • 1 ½ teaspoons Vanilla
  • 1 ½ cups Milk (or almond milk)
  • 2 ½ cups Old Fashioned Oats (not quick)
  • ½ cup Chopped Pecans, (or walnuts)
  • ¼ cup Pecan Halves (or walnuts)

Instructions

  1. Turn on oven to 375° F. Then grease or spray a 8"x8" baking dish. Set aside.

  2. Melt the butter and set aside.

  3. In a small bowl, mash 3 ½ of the bananas using a fork. Reserve the remaining ½ banana (don't mash it). Set aside.

  4. In a large mixing bowl, whisk the eggs. Add the mashed banana.

  5. Stir in the brown sugar, baking powder, salt, cinnamon, nutmeg, and vanilla.

  6. Stir in the melted butter.

  7. Stir in the milk.

  8. Stir in the oats and chopped pecans.

  9. Pour mixture into the baking dish.

  10. Slice the remaining half banana and arrange the slices on top.

  11. Arrange the pecan halves on top as desired.

  12. Bake for 25 to 35 minutes, or until center is set and not too wet.

  13. Let cool in pan until warm, then cut into portions and serve in a bowl. Some garnish options are milk, cream, maple syrup.
