Ingredients

Rice

  • 1 ½ cups Arborio Rice (don't rinse)
  • 2 ¼ cups Water
  • ¼ teaspoon Salt
  • 3 cups Whole Milk (or half and half)
  • ¾ cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla
  • ½ teaspoon Cinnamon (optional)
  • ¾ cup Raisins (optional)

Instructions

  1. Add rice, water, and salt to the pot. Place the lid on and set to Sealing. Pressure cook on High for 3 minutes. When done, let sit undisturbed for 10 minutes (10 minute natural release).

  2. Meanwhile, whisk together the milk, eggs, and vanilla. Set aside.

  3. Release any remaining pressure and then open the lid.

  4. Stir in the milk mixture and the sugar & cinnamon, if using.

  5. Turn on the Sauté setting and bring to a simmer, stirring constantly, then turn off the pot and carefully remove the inner pot to a heat-safe surface.

  6. Stir in the raisins.

  7. The rice pudding will thicken as it cools.

  8. Serve warm or cold, with cream or whipped cream.
