Roasted Spicy Green Beans with Tomatoes

Ingredients

  • 12 oz French Green Beans (haricot vert) or use any fresh green beans
  • 9 oz Grape Tomatoes, or cherry tomatoes
  • 1 ½ Tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Red Pepper Flakes, or more for spicier

Garnish

  • ¼ cup Parmesan Cheese, shredded

Instructions

  1. Heat oven to 425° F.

  2. Rinse the green beans and pat dry with a paper towel. Place on a baking sheet with the tomatoes.

  3. Pour olive oil over vegetables and sprinkle with the salt, black pepper, garlic powder, and red pepper flakes.

  4. Using your hands, gently toss the vegetables with the oil and spices to coat all of them and spread out in a single layer.

  5. Bake for 10 minutes, then stir and cook for 5 more minutes, or until the green beans are a little charred and the tomatoes are soft and slightly blistered.

  6. Serve hot or at room temperature. Garnish with the parmesan cheese.
