Instant Pot Hawaiian BBQ Sloppy Joes

Ingredients

  • 2 Tbsp Olive Oil
  • ½ Onion, diced
  • 1 lb Lean Ground Turkey or Beef (97% lean)
  • 3 cloves Garlic, pressed
  • 2 tsp Ginger Powder
  • 1 tsp Chili Powder
  • 2 tsp Smoked Paprika
  • ¼ - ½ tsp Red Pepper Flakes
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 2 Tbsp Soy Sauce
  • 2 tsp Dijon Mustard
  • 2 tsp Apple Cider Vinegar
  • ¼ cup Teriyaki Sauce
  • 2 Tbsp Brown Sugar
  • 1 (20 oz) can Crushed Pineapple (with juice)
  • ½ cup Ketchup
  • 1 (6 oz) can Tomato Paste

Garnish

  • 6 Pineapple Rings
  • 6 Hawaiian or Whole Wheat Hamburger Buns

Instructions

  1. Turn on the pot's Sauté setting. When it is hot, add the olive oil and the onion and cook for two minutes, stirring occasionally.

  2. Add the ground meat and stir, breaking it up. Cook about 3 minutes.

  3. Add the garlic and stir.

  4. Add the ginger, chili powder, smoked paprika, red pepper flakes, salt, and pepper. Stir well.

  5. Add the soy sauce, Dijon, vinegar, teriyaki sauce, and brown sugar. Stir well, and cook for 1 minute, stirring frequently.

  6. Add the crushed pineapple and stir.

  7. Add the ketchup and tomato paste, but do not stir. Leave it sitting on top. Turn off the Sauté setting.

  8. Close the lid and set the steam release knob to the Sealing position.

  9. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 4 minutes. High Pressure. The pot will take several minutes to come to pressure.

  10. When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes. Then turn the steam release knob to the Venting position to release the remaining steam/pressure.

  11. When the pin in the lid drops back down, open the lid.

  12. Stir the sloppy joe mixture.

  13. Serve on Hawaiian or whole wheat hamburger buns and top with a pineapple ring before adding the top bun. Aloha!
